I thought this recipe was awesome! I, like many others, read other comments ahead of time so I made some adjustments.
I only used about one cup of lite sour cream, 2 cups of cheddar cheese in the filling (then a little more on top of the finished enchiladas). I didn't add any Monterey Jack cheese, and instead added a little mexican cheese. I did use the entire can of condensed cream of chicken soup.
Like many other reviewers have said, this recipe is extremely creamy, and I cannot imagine following the recipe with all the sour cream and cheese.
You can definitely cut back on the ingredients, and it still tastes incredible! My boyfriend loved it and so did I.
I added in some jalapenos which made it incredible! The other change I made was I put red enchilada sauce in pan then on top of the enchiladas before baking. I also added some verde salsa on top before baking.
I highly recommend this recipe!
