Sugar Cream Pie I

Made this for 4th of July. Pies are a tradition at our family gathering and I wanted to try something new. I followed the recipe exactly as written (except I sprinkled the pie with cinnamon sugar rather than cinnamon). My family loved it!! Next time I have to make two because the one disappeared so fast! The custard-like texture was delicious! My two year old probably could have eaten the whole pie if I had let her!

Downeast Maine Pumpkin Bread

Took the suggestion of doing 1/2 oil and 1/2 applesauce. I used cinnamon apple sauce. I also added cinnamon chocolate chips. I baked it in a bundt pan and it was so gorgeous and delicious! Perfect for the Fall brunch I attended!

Sweet and Sour Dressing

I loved this! I used thinly sliced red onion and I didn't have any dry mustard so I used prepared Dijon. Also I thought I'd soy sauce instead of the salt so it would add some color. LOL! Now I sound like one of those ridiculous reviews that gives a whole new recipe with the changes they've made! Regardless...it's good over a salad of mixed greens and mandarin oranges.

Gooey Butter Cookies

I made these last year and put a few of them in the cookie tins I gave away. They are what everyone is requesting this year so I guess I'll need to triple the recipe! Great Christmas treats!

Pork Tenderloin with Tomato and Pepper Sauce

Great way to use leftover pork tenderloin! I reversed the order of things since the meat was already cooked. I sautéed the onions and green peppers (in olive oil instead of butter) and then I dumped in the tomatoes and the chopped up pork and let it simmer. I wanted it a little more saucy to serve over pasta so I added two, 8 oz cans of tomato sauce. Great dish!! I realize I didn’t follow the recipe exactly so I thank you for the idea!

Slow Cooker Pepper Steak

I had a lot of stew beef in my freezer that needed to be used. I wasn't in the mood for stew or stroganoff so I thought I'd try this recipe with the meat. It turned out great! Slow cooking on low made the meat so tender! I added the peppers during the last hour of cooking as suggested by others and then served it over sticky rice. Good stuff!

Shrimp Scampi Bake

I loved how easy this was to make! I followed the advice of others and cut back a little on the butter. I used about a half a stick less and I think that was the right amount. I poured the shrimp and butter sauce over the linguini and garnished it with toasted pine nuts. We loved it!

Monkey Bread V

This is what I make when I find myself with a lot of coupons for cans of biscuit dough, the biscuit dough is on sale and I feel like it's too good of a deal to pass up. One time, between the coupons and the sale, I got 3 cans for free! Monkey bread for everyone! My kids think they've gone to heaven when they wake up to monkey break on a Saturday morning!

Chicken Enchiladas V

This has become a favorite at my house. One time, after I had started making it, I realized I didn't have any cream of chicken so I used cream of celery in it's place. My family liked it better that way and I've been doing it that way since. Very tasty!

Pumpkin Chocolate Chip Cookies III

A hit at the church Halloween party! I used pumpkin pie spice in addition to the cinnamon to give it a more "pumpkiny" taste. Also left the walnuts out due to allergies but no one seemed to miss them. They will definitely be back on my table next fall!

Baked Potato Soup

I was looking for a way to use leftover Easter ham (I had tons of it!) and I tried this soup. In place of the bacon I fried up the ham with some butter. I also did not have half&half so I used a can of cream of celery soup with about 1 cup of milk. It was delicious! My husband had the leftover for lunch the next day and said it was even better. Not the most heart-healthy soup but great as an occassional meal!

Potato Chip Chicken Casserole

This is a great "clean out the fridge" recipe. I had left over chopped broccoli and onion from a stir fry and I mixed that in. Another time it was green peppers and green onions. It's not a casserole the family goes crazy for but they eat it and the leftovers are an easy lunch the next day.

Slow-Cooker Chicken Tortilla Soup

I came across this on a Sunday afternoon trying to get dinner ideas so I didn't have time to do the slow cooker. I did it on the stove top and let it simmer for a couple of hours and it turned out great!

Pineapple Upside-Down Cake VII

Just like Grandma used to make! I have an 11 inch skillet so I used two boxes of cake mix. I filled the skillet a little over halfway and then used the remainder of the batter to make some cupcakes. Turned out great!

Pumpkin Gingerbread

A winner! I threw in a couple of handfuls of mini chocolate chips and then I divided the batter between mini-loaf pans. I believe it made about 7 small loaves. I sliced it up and it made a great finger food at the party. Everyone wanted the recipe!

Vegan Black Bean Soup

What a great recipe! Being a Weight Watcher, I'm always looking for low-fat, high fiber. This soup is less than one point per serving! Plus the family liked it!
