French Toast Casserole
Great starter recipe. This is a perfect canvas for a little culinary creativity. Make this recipe your own with the addition of pecans, raisins, berries, chocolate chips, bananas, or anything else your heart desires. Since I wanted to rate the actual recipe, I added only a pinch of nutmeg this time around. I doubled the recipe and baked it in a 13x9 inch foil pan. A one-pound loaf of sturdy French bread yielded just the right amount of bread cubes. Cube the bread the night before to save time. This is a great use for stale bread. Thumbs up from all three hungry kids!

Flatlander Chili
I needed an amazing chili recipe for a family gathering, and I knew that over a thousand reviews couldn't be wrong. I followed the recipe closely and added only a small can of diced jalapenos for a touch of heat. The chili was a big hit! It was just spicy enough for everyone to enjoy without having to gulp down cold drinks to cool the tastebuds. I received lots of compliments, which was especially nice because I rarely make chili from scratch. I made it a day ahead in order to allow the flavors to blend and heated it in a crockpot for the party. Several guests used the chili to top baked potatoes. I'll definitely save this recipe for future gatherings!

Gourmet Chicken Sandwich
A simple recipe, though some may find it a bit bland. I topped my sandwiches with sauteed sweet onions and Swiss cheese. The addition of rosemary to the mayo/mustard spread is genius! I was disappointed that my purchased focaccia was moldy, so I had to serve the sandwiches on hamburger buns that I had on hand. I had planned to grill the chicken, but a thunderstorm forced me to saute them on the stovetop. I sprinkled the chicken lightly with Greek seasoning prior to cooking. A quick and easy weeknight recipe!
