Whole Grain Waffles

These waffles turned out so light and fluffy! My daughter and I loved them. I cut out the wheat germ (because I didn't have any) and swapped the milk for unsweetened almond milk. I also used grapeseed oil instead of canola and added a bit of honey to the wet mix instead of using sugar. I then made some raspberry syrup by heating up some frozen raspberries on the stove and stirring in a bit of pure maple syrup.

Garbanzo Bean and Quinoa Salad

I found this salad to be quite bland... I could barely taste the spices. I added goat feta and approx. 1 tbsp of red wine vinegar to try rescue the dish, along with more salt/ pepper.

Best Buckwheat Pancakes

Buckwheat is a hard flavour to mask and these pancakes were terrific! My 10 yr old loved them. They are not the regular buttermilk fare, but if you like a healthier pancake, this is a great recipe. I added a dash of vanilla and used a half and half mixture of milk and plain yogurt (as I didn't have buttermilk on hand). I also added blueberries. Light and fluffy!

Vegan Baked Beans

This is one of the better recipes for baked beans that I have found. I cut out the sugar and used canned beans (rinsed) instead of dry. I can just throw all the ingredients in a slow cooker and have a very tasty meal a few hours later! Make sure you don't do that with dry beans... the tomatoes will stop them from cooking.

Chocolate Chip Banana Muffins

Oh. my. word. These are possibly the best muffins ever. I am amazed and astounded. I just made a few minor changes... whole wheat flour, 1/2 cup brown sugar, more yogurt than oil. So good. I am making them again right now.

Spinach Quiche

It seems a little ridiculous to rate this recipe after there are soooo many. But this is a great(!) recipe. I quadrupled the recipe to feed a large crowd for Easter. It was a definite hit. I used the recipe as written, with a tad less butter, and it rocks. Any additions would just be gravy.

Syrian Spaghetti

I am not a fan of this one. I thought I would try it out b/c I was a little low on groceries and it sounded different. Really, the only reason I am giving it 2 stars is because my daughter (who is 5) liked it. I need a little more flavour... and pasta with cinnamon is just like I thought, not really a good mix.

Roasted Red Pepper and Tomato Soup

I loved this soup... as did my family. I left out the hot spices (b/c of my 2 yr old), and added an extra clove of garlic. I also added some extra veggies that I needed to use up. The result was a fantastic. I did not use the flour/ water, sugar or sour cream. We are health nuts and I try to use as few "extras" as possible. I will definitely be using this recipe again!

Insanely Easy Vegetarian Chili

This recipe is fantastic! There is so much flavour in this dish. (Just add more chili powder if you need more zip). I make it at least once every 2 weeks. My 2 year old loves it!

Cape Cod Oatmeal Cookies

This is a really great recipe. The taste of the cookie dough is amazing! The cinnamon gives it a very nice flavour. I swapped the nuts for M&M's b/c I don't like nuts in my cookies. My family gobbled them up! Okay, I had a "few" as well...
