Pork Tamale Pie

Hubby says this is definately "A Make Again" recipe! YUMmmmm! About the only changes I made was: 1.) Added an extra egg, 1/2 c. more cornmeal & 1/4 c. more milk. 2.) I substituted 2 t. of 40% less sodium Taco seasoning for the spices, 3.) Used 1 can of lower sodium chicken broth, 4.) added a can of drained black olive slices (the little can) and 5.) Topped with shredded cheddar. VERY tasty! Will try again with beef chunks and another time with shredded chicken!

Banana Pancakes I

Before today I always thought to make good pancakes, I'd have to have bisquick in the house. But this morning I tried this recipe, using a few suggestions from other reviewers, and WOW! THEY WERE AMAZING!!. This is definately "A KEEPER"! Here's what I did differently from the recipe. 1. I use 'Extra Lg.' eggs, used 2 instead of 1. 2. I added the 1 t. of pure vanilla extract. 3. I used 2 T. of baking powder (mine was 'old' and I was concerned it wouldn't give enough lift). 4. Instead of sugar I used 1 T. baking Splenda and 2 T. brown sugar. 5. I added flour, 1/8 c. at a time until the batter was the correct consistancy for how we like our pancakes. This is a terrific recipe, Thanks, Andrea!

Baked Teriyaki Chicken

This was the best teri sauce I've ever made, which is saying a lot as I live in Hawaii and have made A LOT of teri sauce!! My changes were: 1/8 c. brown sugar, 1/8 c. reg. white sugar & 1/4 c. Splenda (cooking kind). Used white vinegar as I was out of apple cider vinegar, BUT... stirred in 4 oz. apple sauce for that flavor. I only use 'low sodium' Aloha shoyu (soy sauce). And I used 1 inch fresh ginger, peeled and finely grated. I didn't add the cornstarch until later. I mixed up the sauce, used it to marinate my raw chicken for 6 hrs. Then, while they were grilling, I brought the marinade to a boil for 2 mins. (you must do this to kill any bacterial from the raw chicken). Then I added the cornstarch that I had mixed cold water into, making a 'slurry'. Turned down the heat and stirred constantly until correct thickness. Removed from heat, covered & served with grilled chicken & 'sticky white rice' (made with Calrose rice... the way we like it over here)and kernel corn on the side. Amazing! Thanks for this winner of a recipe!

Cabbage Roll Casserole

I've made this probably 10 times since finding it. Its so much easier than making cabbage rolls, yet just as delicious! Changes I make that we enjoy are: I fry up 6 strips of bacon (diced) with the hamburger (I only use 1 1/2 lb. of the 93% lean). I only use 1/3 c. chopped onion. I only use an 8 oz. can tomatoe sauce, but I also add 14 oz. can of diced tomatoes w/the juice. I omit the salt (plenty of salt in the canned ingredients). Then I only use 1 can of beef broth plus 14 oz. HOT water mixed with 2 t. Wyler's Sodium Free beef bouillon. I add 2-4 t. of sugar to round out the acid from the tomatoes. The smell drives my doggies nuts, and they always beg until they score a little bit after we have dinner. Serve with crusty bread & soft REAL butter. Then pray for leftovers (as its even BETTER the 2nd day). This is GREAT casserole!

Awesome Sausage, Apple and Cranberry Stuffing

THIS IS AMAZING! After 30 yrs. of marriage, I FINALLY made 'homemade' dressing & will never go back to boxed!! I made a half portion since it was for only my hubby & me. I used 1/2 'bag' of the pre-cubed, dried bread but didn't use its included seasoning. I used JimmyDean's low fat Regular sausage. For the 'wet ingredients', I used 1 can lower sodium chicken broth, a beaten egg, a spash of Mrs. Buttersworth & the melted REAL butter. For seasoning, I just used some poultry seasoning. And of course, I didn't forget the dried cranberries! Baked in stoneware bowl at 350ยบ until it was obviously 'done' and nicely browned & crusty on top. Thank you, thank you, THANK YOU for the BEST stuffing recipe I've EVER tasted!!
