Pork Tamale Pie
Hubby says this is definately "A Make Again" recipe! YUMmmmm! About the only changes I made was: 1.) Added an extra egg, 1/2 c. more cornmeal & 1/4 c. more milk. 2.) I substituted 2 t. of 40% less sodium Taco seasoning for the spices, 3.) Used 1 can of lower sodium chicken broth, 4.) added a can of drained black olive slices (the little can) and 5.) Topped with shredded cheddar. VERY tasty! Will try again with beef chunks and another time with shredded chicken!

Banana Pancakes I
Before today I always thought to make good pancakes, I'd have to have bisquick in the house. But this morning I tried this recipe, using a few suggestions from other reviewers, and WOW! THEY WERE AMAZING!!. This is definately "A KEEPER"! Here's what I did differently from the recipe. 1. I use 'Extra Lg.' eggs, used 2 instead of 1. 2. I added the 1 t. of pure vanilla extract. 3. I used 2 T. of baking powder (mine was 'old' and I was concerned it wouldn't give enough lift). 4. Instead of sugar I used 1 T. baking Splenda and 2 T. brown sugar. 5. I added flour, 1/8 c. at a time until the batter was the correct consistancy for how we like our pancakes. This is a terrific recipe, Thanks, Andrea!

Baked Teriyaki Chicken
This was the best teri sauce I've ever made, which is saying a lot as I live in Hawaii and have made A LOT of teri sauce!! My changes were: 1/8 c. brown sugar, 1/8 c. reg. white sugar & 1/4 c. Splenda (cooking kind). Used white vinegar as I was out of apple cider vinegar, BUT... stirred in 4 oz. apple sauce for that flavor. I only use 'low sodium' Aloha shoyu (soy sauce). And I used 1 inch fresh ginger, peeled and finely grated. I didn't add the cornstarch until later. I mixed up the sauce, used it to marinate my raw chicken for 6 hrs. Then, while they were grilling, I brought the marinade to a boil for 2 mins. (you must do this to kill any bacterial from the raw chicken). Then I added the cornstarch that I had mixed cold water into, making a 'slurry'. Turned down the heat and stirred constantly until correct thickness. Removed from heat, covered & served with grilled chicken & 'sticky white rice' (made with Calrose rice... the way we like it over here)and kernel corn on the side. Amazing!
