Chewy Coconut Cookies

made it as is without any changes and it was really great. Chewy and crisp after about 11 minutes in my oven. I doubled the batch and added white choc chips to half but both w/ and w/o are moist and just plain good.

Banana Peanut Butter Bread

I love the idea of PB and banana together; however, this bread was not as most and flavorful as others I've made. I did muffins instead of a loaf and while the batter smelled heavenly, the final product was a bit dry. Yet, I took others' advice to reduce the flour and increase the PB. Worth a try but I think I will stick to the "banana banana" bread and "banana sour cream" bread recipes on this site.

Pumpkin Oatmeal

After reading RENEE35's review, I was worried about the raw pumpkin taste. I didn't want to make custard per se, with the egg and all. So, my solution was to make a batch of Libby's "quick pumpkin pudding" with one packet of FF SF vanilla pudding, a can of FF evap milk and a tsp of pumpkin pie spice. Stir in with your prepared oatmeal. Perfection without the calories or the egg.

Grilled Brown Sugar Pork Chops

This was a great, quick and easy meal. I made the sauce as listed, expect I added some cinnamon and a little extra apple juice for flavor. I baked the chops in the sauce in the oven at 350 for 45 minutes instead of grilling. Perfect. The sauce yeilds quite a bit, which is great if you have a side to absorb it (or even some extra chops).

BBQ Chicken Pizza II

Because I was afraid of a mouthful of BBQ sauce as per the original recipe, I used 1/3 cup of barbeque sauce and a half can of store-bought pizza sauce. This change made the pizza delicious - no overwhelming BBQ flavor, just a nice balance between the sauces. I will definitely make this again; both my husband and I loved it!

Easy Mexican Hot Chocolate

tasty, easy recipe using on-hand ingredients! I used a full cup of milk for more creaminess and melted a little chocolate in a mug to substitute for the syrup, as I had none on hand. reminded me a little of chai. thanks!
