Slow Cooker Pork Chops II

Easy and flavorful! I usually only cook 2-3 thick chops, so I adjust the ingredients downward a bit. I like to add 1/4 cup of Marsala wine and some sliced mushrooms (for the husband) into the broth. My crockpot cooks overly hot, so I usually cook these 2 hours on high then finish up on low or warm for another hour or so.

Easy Chicken Enchiladas

Great recipe, and so easy. I happened to use 8" tortillas and was able to fill 10 of them in my 9x13 pan. Used low fat cream cheese and 2% milk Mexican blend cheese for the topping. Two large chicken breasts were more than enough. Added a little garlic powder to the filling, along with 1/2 can green chilies and a couple shakes of Chipotle Tabasco sauce for a little zing. Also used a can of red enchilada sauce on the bottom of the pan and top, as suggested, and these were excellent. Next time, might try with green enchilada sauce, a diced chipotle pepper with a little adobo sauce, and jack cheese.

Pumpkin Black Bean Soup

Followed the recipe, other than I used my crockpot (4 hrs on high), used less butter to saute' the onions, used a can of diced tomatoes with mild green chilies, and I used Dry Sherry rather than vinegar. Also used 1 tsp of ground cumin 1 tsp ground coriander. The beef broth was a low sodium version. Refrigerated the pot overnight, then re-heated the next day. Soup thickened pretty nicely, but next time, I'd add a 3rd can of beans to the blender. Served with buttermilk cornbread. Would be good with some Monterey Jack Cheese, diced onions, and/or a bit of lime on the side as well.

Pecan Pie Tarts

Tasted okay, but I will not make these again. Hoped the filling would be more like a pecan pie. I did use a Pampered Chef tart pan. Way too much filling for the amount of crust dough.

Grilled Rosemary Chicken Breasts

Followed the recipe other than did not add salt. Used Trader Joe's whole grain dijon mustard. Delicious! The flavor of the fresh rosemary from my herb garden was excellent.

Simple Turkey Chili

This chili exceeded my expectations. I doubled the recipe to have leftovers. I used a bit less cayenne pepper, omitted the salt, added a large chopped green bell pepper when the onion went in the pan, and used one can of rinsed & drained black beans and one can of rinsed & drained pinto beans (don't care for kidney beans). Really enjoyed the ground turkey in this. Didn't expect to like it as well as ground beef, but I sure did. Thanks for a great recipe!

Maple Salmon

Very good. Read most of the reviews then decided to use 1 Tbsp of reduced sodium soy sauce instead of two, and 1 Tbsp of bourbon to try to cut the sweetness. Next time, will grill the salmon and try the sauce as a basting liquid during the last 5 minues or so. May add a little mustard too. Thanks for the recipe!

Pork Chops with Onions and Apples

Fantastic flavor combination! Have to admit I was surprised how good this was, plus it's easy. I grilled two chops but used the same amount of apples, onions, etc. as the recipe suggests. Tried using a bit of ground sage on the chops the second time we had these. Excellent! BTW, it took me about 12 minutes to saute the apples and onions. Thanks for sharing this recipe!

Picnic Slaw

Excellent! I recommend using a sweet onion, if you have one. I added a chopped mango and a couple shakes of smoked paprika to the slaw and served with smoked pork loin and seasoned oven fried potatoes. This is my new favorite recipe for cole slaw. Thanks for sharing.

Chocolate Wave Zucchini Bread

Very good. Pressed out as much water from the zucchini as I could, and it was quite a bit. Not sure I would have needed to do this plus add the additional water the recipe called for. So-so on the pumpkin pie spice.

I use this marinade for boneless, skinless chicken thighs on the grill. Use a fresh garlic clove rather than garlic powder and omit the salt. Very easy, and great flavor without making kabobs!

Best of the Best Blueberry Muffins

These were great. Did not change a thing. Doubled the recipe and ended up with 32 muffins. I mixed these by hand and the blueberries stayed intact. Used Michigan berries that were very juicy. In my haste to sample a muffin after baking, discovered the paper liners don't come off easily. Wait until the muffins are totally cool and the liners come right off. Thanks for a great recipe!

Owen's BBQ Chicken

Enjoyed this. Better than bottled BBQ sauce. Used boneless, skinless, chicken breasts. Grilled on low heat on lower grill rack until nearly done. Put on top rack and started basting with the sauce at 2 minute intervals. Thought it might taste like vinegar, but it didn't. Added a few shakes of smoked paprika to the sauce.
