Baked Potato Soup

Delicious and super easy. I was going to make baked potatoes but my potatoes were sprouting, soft and about to go green. So I did a quick search and came across this recipe. So obviously I didn't use pre-baked potatoes, I chopped mine up and put them in with the broth and just boiled til they were easily pierced with a fork. I also doubled the recipe, good thing to, cuz my sister had thirds and I had seconds! Only tweaks I did were to add half the amount of basil and milk, and omitted the hot sauce because my little baby doesn't like spicy stuff. I used 2% milk instead of half and half and served it with sour cream, the bacon pieces, and cheddar cheese. I'm glad I cut the basil down too cuz it was perfect. Super easy and delicious. Thanks for a great recipe!

The Best Rolled Sugar Cookies

This was a very good and easy recipe to use. Not too crispy even when rolled super thin. Also not too sweet -which I like since I usually use frosting (the sugar cookie icing from this website). I did sub 1/2 cup of the sugar for powdered sugar and also used the powdered sugar for rolling it out. This helped add just the perfect hint of sweetness and avoided the floury taste that other reviewers were mentioning. Also added an extra teaspoon of vanilla, but don't think it helped or changed it at all. It would need a bit more to actually come through I think. I rolled them out on my counter and didn't have too many issues with sticking. After the pieces are cut I use an offset spatula to get them off the counter smoothly. My cookies were a bit bigger than 2" dia. More like 3-4" and they cooked perfectly at 8mins. I did use parchment and Silpats on the cookie sheets with also helps.

Mojo Roast Chicken (Pollo Asado)

I was looking for a quick sauce or marinade based on lime and this fit the bill perfectly. I halved the recipe for a couple defrosted chicken thighs and only let it sit before grilling maybe 10-15 mins. But wow, both my husband and I were surprised. The chicken was moist, and very flavorful. I used fresh squeezed lime and orange and we didn't need anything to go on top. Nice simple meal on a hot summer day.

Mahi Mahi with Coconut Rice and Mango Salsa

Yummy! My Husband, kids and niece (5, 2, and 9months) all devoured this. Felt like I made the recipe pretty much spot on, but after thinking about it I guess I did change up some things... Forgot the ginger in the marinade, used brown rice with 1 cup water and 1 cup homemade chicken stock, no bouillon. Followed some of the other suggestions for the mango salsa by adding some onion, finely chopped sweet red pepper with the mango, after it was done I threw in some cubed avocado and a splash of lemon juice. Next time I'll add cilantro, lime juice and red onion. But otherwise it was delish. Its definitely going into our rotation of dinners. I did use like a 1/4 the amount of red pepper flakes because my kids are super spice wimps. And I thought it was perfect but I still had to scrape off some of the spices left on the fish for them. Its just cuz of the hot spots left from the flakes.
