Authentic Louisiana Red Beans and Rice

I'm not from the south but these beans were amazing. I too used 1/4 tsp of cayenne and added oregano. I used all fresh herbs but followed the rest of the recipe and they came out great. I was told by a fellow chef that the longer cayenne cooks the hotter it becomes so she like to add hers at the end to avoid the heat but still have the flavor. Great recipe, I'll be using this again!
