I'm a university student who cooks when I ought to be studying. Most of the food I make is for me and my roommates, or gets taken to work.
My favorite things to cook
I love to bake, and could easily live off of cookies and muffins. But my roommates couldn't, so I have to make real food somethimes too.
My cooking triumphs
Any time I replace one ingredient for something else (cause i'm too broke to go shopping, or want to cut fat or calories). If it still works out, I definately feel triumphant.

Meringue Mushrooms
I didn't find these took much time at all! There aren't a lot of ingredients to assemble and when you beat on high it only takes a few minutes to get a good meringue, and the piping was really easy too...I don't have a pastry bag so i just cut a corner out a zip-lock and used that, and it worked fine. The only real comment I have is that this recipe makes a lot of merigue. I guess you could make the mushrooms a lot bigger than life sized, but i'd say you could probably halve it and still get 36.

Pumpkin Cookies with Penuche Frosting
you know what these taste like? the pumpkin scones from Starbucks. And just like the scones, the topping is really really sweet. the only real difference is that the texture isn't as dense. I can see how it would make a good bar. I got 48 normal sized cookies.
