I made these muffins for my job and they loved it. I did make a couple of changes. I added 1/4 cup of fat free half and half, 1 teaspoon of ground ginger, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and a 1/2 teaspoon of allspice, and 1/2 teaspoon of black walnut extract. DID THAT EVER TASTE GOOD. I did like the way the cream cheese covered the muffin, and adding the spices and the half and half did not make it as dense and it added a lot of flavor to the muffins. TRUST ME!! I also used walnuts instead of pecans since i did not have pecans. That worked fine. I think next time I will add some chopped walnuts to the muffin batter. That would be really yummy!!
