Baked Sweet Potatoes

Reviewed: Aug. 8, 2014
Make these often sometimes putting them in foil on the bbq grill. I have done it with changing up the spices too. Yummy!

Pittsburgh Potatoes

Reviewed: Apr. 13, 2014
This was a very cheesy potato recipe, just what we were looking for! I did add some crushed ritz on top, then dotted with butter because we like a little added crunch, but did not make other changes. It's been a long while since I've used Velveeta...mom used to use it often for homemade mac and cheese, potatoes au gratin and cheese sauce. Thanks Brad P. for a blast from the past comfort dish!

Creamed Chicken over Beans

Reviewed: Apr. 27, 2012
YUM! I did an ingredient search because I had leftover chicken and a package of french cut green beans. When I read this recipe I was not sure it would work with my kids, but I had all the ingredients, so I took a chance since the reviews were quite good. Well, it lived up to it's rating and reviews! Didn't change a thing....quick and easy, it was a hit with myself and my teens! Try it...you'll like it!

Sunshine Hummus Melts

Reviewed: Feb. 18, 2011
When I took the first bite, I wasn't sure I liked this...I liked each item individually, but not thinking I liked them together! After each successive bite the flavors were growing on me. By the time I ate the entire sandwich, I had decided I liked it and would definitely make this recipe again. I used Honey Crisp apples because that is what I had in the house, next time I'll try to stick to the recipe and use Granny Smith.

Cream Of Chicken Soup

Reviewed: Jul. 6, 2010
I used this in a chicken pot pie recipe and my family thought the taste was good. I cut the milk in half, used butter in place of oil, and I added some poulty seasoning after taking a little taste, just before adding it into the chicken pot pie...thanks for the recipe..

Lentil Rice and Veggie Bake

Reviewed: Jan. 31, 2010
This recipe was awesome tasting and quite filling. I substituted short grain brown rice for long grain white. Red lentils are a must!

Quinoa Side Dish

Reviewed: Jan. 11, 2010
5 stars for the blend of flavors, as the flavor of this dish was wonderful...but unfortunately the rest of my family did not like the texture of quinoa. I will try substituting brown rice for quinoa next time to see if that goes over better.

Butternut Squash Fries

Reviewed: Dec. 1, 2009
These were TERRIFIC as written...I tried adding spices other reviewers added, and they were also tasty that way...but they are truly good without olive oil, and with salt only...I used a potato peeler to remove the outer skin before slicing into fries...worked great! Thanks for this healthy way to enjoy fries!

Best Apple Salad

Reviewed: Nov. 27, 2009
This was tasty, and I enjoyed the crunch factor and the variety of flavors! I added celery like a previous reviewer, and kept some of the juice from the kidney beans as per another reviewer; used green onions and yellow bell pepper rather than red onion and green pepper, but it was what I happened to have in the house. This salad seems to be versatile depending on what you have in the fridge...kept the dressing as is...it really popped!! Thank you so much!

Cheesy Baked Cauliflower II

Reviewed: Oct. 22, 2009
Loved this recipe...although I made some changes. I drizzled 2 tbsps olive oil rather than butter and added shredded cheddar to the swiss. I also added garlic powder omitting salt and pepper. I only had one tomato at home...next time I'll be sure to use two. I baked until the cauliflower was slightly browned. It turned out terrific!

Skillet Chicken and Rice

Reviewed: Mar. 13, 2009
I substituted the soup broth with water and bouillon (sorry Campbells!); used 2 cloves garlic vs. garlic powder and brown rice rather than the white...the kids and hubby were practically licking their plates, needless to say there were no leftovers!

Mendi's Favorite Orzo

Reviewed: Nov. 2, 2008
I love mushrooms, but a couple family members don't, so I omitted those, but bet this tastes better WITH. I will make them another time with mushrooms as a side for me and the mushroom lovers in the house. To make up for the olive oil, butter and mushrooms that I omitted, I added a few shakes of garlic powder and a Tastefully Simple season salt and this was a nice side dish. Can't wait to try it with the mushrooms!

Spooky Witches' Fingers

Reviewed: Oct. 31, 2008
These cookies look awesome in the presentation! I made them twice, first with the almond extract, and the second time I added 2 1/4 tsp vanilla omitting the almond extract. The omission of the almond made the cookie taste much better. I added 3-4 drops of green food coloring the second batch, and they had just a tinge of green that made them look a little more vile. I shaped them rolling them in my hand without the wax paper, and that worked fine. Make sure you shape the cookies thin, because they spread a bit while cooking and the thinner cookies look more realistic. My batch made about 50 cookies, and were done in about 10 minutes. Enjoy!

Lasagna Alfredo

This was great...the hubby and kids loved it! I didn't have ricotta so I substituted with cottage cheese. We like dark meat so I used chicken thighs, and I deleted the salt and pepper. This recipe is a keeper! Thanks!

Loved it! I added more carrots and celery, cut the lentils to 1 1/2 cups and added more vinegar. It is even better leftover! Thanks for the great and healthy recipe.

Chuck's Favorite Mac and Cheese

Reviewed: Jan. 15, 2008
My family loves mac and cheese and they would not eat this after I made it. I followed the recipe exactly, and it ended up very dry, and everyone complained especially about the bread crumb topping. I was disappointed after seeing it was a 4.5 star recipe. I will not make this recipe again.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Dec. 29, 2007
I was a little skeptical about this at first, but I had left over spaghetti squash after making another recipe on this site, and had all the other ingredients on hand. It ended up tasting quite good! It is good either warm or cooled, however we liked it better warm. Thanks for the interesting new recipe!
