Vegan Banana Blueberry Muffins

Reviewed: Sep. 24, 2003
These were terrific, gone in two days! I'd been searching for a blueberry muffin recipe without oil or butter. These were a little more like banana bread with blueberries, but they were nonetheless very yummy. A keeper for me.

Blueberry Cheese Danish

Reviewed: Aug. 12, 2008
Well, mine turned out OK inside and out, and it was quite good, but this recipe did not get 5 stars because it seemed very, very time-consuming to me. I did not time myself while preparing it, but it seemed a lot longer than 20 minutes of preparation, which makes me doubtful if I would try it again. That said, the results were fine, and perhaps someone else will indeed get done in 20 minutes! I made two changes -- First, where I live, it is almost impossible to find blueberries, so I used blueberry (myrtle) jam. Secondly, two TSP of lemon juice was nowhere near enough to make the icing smooth enough to drizzle. I added soymilk drop-by-drop til it reached the right consistency.

Djente di Kacho (Dog's Teeth Coconut Candy)

Reviewed: Jul. 22, 2009
I have been trying to find a recipe my grandmother had which was for coconut candies. This was the closest I could find. It was not the same as what she used to make but it was still very good. We ended up eating all of them in one sitting! BTW, I did not need a cup of water. About a half-cup worked.

Banana Chocolate Chip Cookies

Reviewed: Jul. 24, 2012
I tried this today for the first time. Because many other reviewers said that the texture was soft/cakelike/muffin-like, I went ahead and put the batter into metal cupcake liners rather than prepare them as cookies. The result was marvelous -- yummy soft chocolaty muffins with a surprisingly strong banana aroma. If you make them this way, they yield about 24 muffins and need a couple of minutes more in the oven (test with a toothpick). Thanks, Evelyn Brown.
