Baked Kale Chips

I don't have a salad spinner, and I might have taken these out too soon, but they were still great. I salted them after baking, as suggested in some of the reviews. Two of the kids liked them, but my husband thought I was trying to poison him. I wound up finishing the batch myself.

Roasted Swiss Chard with Feta

Wow, this is the first time I had Swiss chard, and it is one of my new favorites! I did not follow the recipe exactly and I just eyeballed the proportions. I used half an onion, which was just right, but next time I will use less salt and oil--as the greens wilted down, there was too much salt and oil for my taste. I added pine nuts and garlic, which were great, and substituted the cheeses I had on hand: mozzarella and brie. I will skip the cheese next time unless I have feta.

Bananas Foster II

I made it without the nuts and rum--it's the kids' favorite dessert now! I put the ice cream in martini glasses and leave them in the freezer until ready. When the bananas are done, I scoop them onto a plate and continue cooking the sauce until it caramelizes. Then I put the bananas over the ice cream, followed by the caramel sauce.

Spinach and Potato Frittata

To my amazement, the kids all had seconds, and even my husband (who is not a big fan of eggs) liked it. It was so easy and tasty. I just eyeballed the measurements and it still came out great.

Master Recipe for Rich and Creamy Cheesecake

This was my first time making cheesecake, and thank God all that effort turned out to be worth it. I used 8 crushed Oreos to make the crust, and everyone agreed it was not enough crust for their taste. I'll try 16 Oreos next time. The cheesecake itself was delicious. I made it plain this time but will try a variation next time. I did not have a springform pan so I used a 9 inch cake round. I used wax paper cut to fit the bottom and froze the finished cake after cooling to help turn it out of the pan.

Lentil Soup

This recipe is very forgiving (easy to modify with substitutions) and always tastes amazing. The vinegar ties it all together--I use white distilled and prefer it to balsamic in this recipe. Try it with homemade bread and butter!

Perfect Pumpkin Pie

I'd never made pumpkin pie before (since I'm not a fan), but my step-son always lamented not having it on Thanksgiving, so I told him I'd make it if he helped. It was easy and foolproof (I realized too late that I was out of nutmeg). I used the Eagle Brand sweetened condensed milk rather than evaporated milk, and it turned out so well that I didn't mind having some (and the kids all had seconds). My step-son gives it 5 stars.

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

I was making this for my husband all the time because he loved it. Today I broiled it instead, and he said it was *this* was his new favorite recipe. He could hardly believe it when I said it was the same recipe I always used, just cooked differently. This recipe is great on the grill, but apparently it's even more flavorful when broiled in the oven.

Beef Stew VI

I made this for my husband, and he said it's his favorite of anything I've made him. I halved the recipe but followed the same cooking times, and it came out great. I added 1 T of Worcestershire, A-1 steak sauce, and ketchup (which a commenter suggested), but other than that, I followed the recipe exactly. I'm a vegetarian, so I didn't taste it, so it's very helpful that the recipe works without adjustments.
