Spinach and Rice (Spanakorizo)

Thank you, Tigerdyr, for the modifications. I didn't add garlic, but I did use chicken broth and chopped tomatoes, cinnamon and cumin. With the feta cheese and lemon juice, this dish was awesome! My hubs gave it a 9 on a scale of 10, and that's saying something for someone who is very picky about how he likes his spinach prepared!:-) And, thanks Kathy W., for the original recipe. :-)

Easy Tilapia with Wine and Tomatoes

I made this recipe with the addition of onions and portobello mushrooms. I didn't have fresh basil, so I used dried. This was one of the most delicious fish recipes I've tried. Hubby and I even debated about how much it would cost in a restaurant!

Eggless Milkless Butterless Cake

This is a wonderful recipe. I didn't have any allspice, so I used ground cloves. I also didn't have raisins, but I wouldn't have used them anyway since my hubby and I do not like them. Cake is flavorful and moist. I served it with vanilla ice cream. Yum!

Mushroom Chicken Cacciatore

This was a deep, rich, flavorful recipe. The only substitution I made was condensed tomato soup in place of the tomato sauce. Easy to prepare, delicious, and I will make it again.
