Zucchini Corn Fritters

Reviewed: Aug. 2, 2008
What a different app! Another great way to use zucchini! I used frozen corn and fried these in a deep fryer. I do think they needed a little more spice so I will try to experiment next time. They didnt last long in my house. The extra batter stayed nice in the fridge so you can prepare a day ahead.

Kickin' London Broil with Bleu Cheese Butter

Reviewed: Jul. 20, 2004
This is excellent!! It definately added a kick to the steak. I also put it in my mashed potatoes and boy that gave them tons of flavor!! I think it would be great on any veggie too.

Elegant Pork Loin Roast

Reviewed: Jan. 1, 2009
Wow I was very skeptical about this recipe because of the prunes but dont let it scare you!!! I dont think I will ever look for another pork loin recipe again. This was very easy to make and so juicy!! 3 hours in the oven would have been way too much. I put the roast in the oven for 15 minutes in 450 then turned the temp down to 250 for the rest of the time. It took only about 2 hours to reach 150 and then I let it sit for about 15 minutes before carving. The degrees is everything for this recipe. You should cook it slow to keep it from drying out. The meat was just slightly pink and the gravy was unbelievable on the pork. I cant wait for leftovers tomorrow!! A must try recipe!!

Hot Artichoke Spinach Dip

Reviewed: Apr. 26, 2008
Missing lots of flavor. I think needs to be made with 8oz of cream cheese instead of the sour cream.

Reviewed: Dec. 5, 2010
I doubled the recipe and used 1 cup brown sugar and 1 cup white sugar and baked in a 9x13 for about 25 minutes. I did add chocolate chips to the top of the batter prior to baking. They were excellent! Very eay and all the ingredients on hand.

Crab Rangoon III

I did add more crab then called for in the first batch and they tasted much better the second batch when I added more cream cheese to my mixture. I will try the next time without the water chestnuts.

Bermuda Spinach Salad

I love different salad recipes and this one is a keeper! The flavors of all the ingredients is perfect and the dressing is just sweet enough to make it all pop! I would like to try and add some chicken next time.

Meatball Soup

Reviewed: Nov. 2, 2009
Never heard of this soup before! So glad I tried it. I did add about 30+ meatballs and about 2 to 2 1/2 cups of macaroni to it so it was more like a stew. The next day it was more like chop suey so I just added more water and tomato sauce. Great flavor and a differnt way to use up meatballs!

Oven Roasted Red Potatoes and Asparagus

Reviewed: Jun. 2, 2009
This could be a 5 star recipe with some changes. Following the recipe exactly the asparagus was overcooked and the rosemary and thyme was overwhelming. Next time I will cut the spices in half, and play with the cooking time. I also think broiling the dish at the end would brown and crisp it up a bit. Has potential!

Garlic Chicken Fried Chicken

Reviewed: Dec. 3, 2009
What an easy recipe for fried chicken! I used cutlets so I didnt have to pound out the breasts. Also doubled the garlic, paprika and pepper and buttermilk instead of milk.

Wonderful Raspberry Walnut Dinner Salad

Reviewed: May 7, 2009
This was a good salad but nothing that I would make again or crave. I thought it was too sweet. Maybe it was the raspberry walnut dressing I used. Newmans.

Weeknight Chicken Cordon Bleu

Most favorite recipe!! It takes no time at all to put this together and looks like you spent all day! I could eat this every night! I always double the amount of meat and cheese in each chicken. Just gives it more flavor!

Broccoflower®, Cranberry and Almond Salad

This was a very tasty and different recipe. I used regular Broccoli and let the ingredients stand in the fridge for a few hours to bring the flavors together. Easy to put together in a hurry and very impressive taste!

The only thing I did different was added the onions to the potatoes. These didnt have much flavor so next time I will play with some spices. It does take a lot of time to prepare these so be prepared!
