Bermuda Spinach Salad

I love different salad recipes and this one is a keeper! The flavors of all the ingredients is perfect and the dressing is just sweet enough to make it all pop! I would like to try and add some chicken next time.

Beth's Spicy Oatmeal Raisin Cookies

The most perfect Oatmeal Raisin cookie recipe. A bit crunchy on the outside and soft in the middle. The spice of the cloves gives it a nice flavor. Followed the recipe exact but did add 1/2 tsp more cinnamon. Will try it next time with some chocolate chips!!

Apple Butter Pork Loin

Pretty easy recipe and the flavor of the apple butter with the pork is wonderful. I followed the recipe except for cooking time and next time I will only use about 1 cup of apple juice as I thought it was too much. The 2 cups almost covered my pork and made the apple butter mixture run off. My pork was done in about 2 hours.

Mouth-Watering Stuffed Mushrooms

Oh so yummy! I have made these with and without sausage and both times they are delicous! A great recipe that you can premake and then pop in the oven when needed. Keeper!

Gingerbread Biscotti

I think I over cooked my biscotti. When I put it in the oven the second time I felt like it wasn't crunchy so I cooked it about another 20 minutes and it was really hard. It does get crunchy when it sits out of the oven. So I will try again another time! The taste of the spices was very tasty!

Savory Party Bread

I had a realt hard time getting the cheese inbetween the cut slices of the bread. So I felt like all the cheese was on the top part of the bread pieces. I will try to make again and think of a better way to get the cheese into the bread without breaking it all apart!

White Chocolate Raspberry Cheesecake

Chocolate and raspberry is my favorite and you couldnt ask for a better cheesecake!! I did use semi sweet chocolate with this as I didnt have white on hand. I also didnt stain the raspberry sauce and poured the remaining sauce over the top and then melted chocolate before refrigerating. Then topped it off with fresh raspberries. I could have eaten the whole thing!

African Peanut Soup

Weird ingredients in this soup but so good! Dont let it scare you. It is a must try!! The changes I made was added 4 chicken breasts that was chopped and sauted in garlic and pepper, chicken broth, 16 oz jar of salsa and 1/4 tsp cayenne pepper and 1 cup rice. Most changes was because of what I had on hand. It is a nice and hearty soup and will make many more times!

Garlic Pasta

Oustanding flavor for such a simple recipe. I only added about 1 tsp of red pepper and it was hot so I couldnt imagine a whole tablespoon! I would like to try it with some chicken or sausage too.

Asian Beef with Snow Peas

This dish has great flavor with the garlic and ginger. I didnt have rice wine so I used a white wine instead. Also added sliced fresh mushrooms for another veggie. I served over brown rice. I think next time I will add some red onion and water chestnuts.

Garlic Chicken Fried Chicken

What an easy recipe for fried chicken! I used cutlets so I didnt have to pound out the breasts. Also doubled the garlic, paprika and pepper and buttermilk instead of milk.

Meatball Soup

Never heard of this soup before! So glad I tried it. I did add about 30+ meatballs and about 2 to 2 1/2 cups of macaroni to it so it was more like a stew. The next day it was more like chop suey so I just added more water and tomato sauce. Great flavor and a differnt way to use up meatballs!

Rempel Family Meatloaf

What a simple but great recipe. I did use saltine crackers and worcestshire sauce as that was what I had on hand. Definately a good recipe to keep as the ingredients you usually have on hand. Also a good recipe for a meatloaf without onions!

Pineapple Chicken Tenders

This was an easy recipe to make but I was thinking it would have had a stronger flavor of the pineapple taste. I had let the chicken sit for a day in the sauce and thought the flavor was going to be great but next time I make it I will try to double the pineapple juice to see if that helps. Made as kabobs over brown rice.

Spicy Peach-Glazed Pork Chops

The sauce is to die for! Will keep the sauce recipe for many other cuts of pork. Make sure you really sear the chops in the pan to make very crunchy. I used chili powder insted of paste, olive oil and marsala wine. I also had homemade peach preserves that I used in the recipe. Save the sauce to serve on the side as a gravy. The smell will have your family running to the table!

The flavor is definately there in these cookies! Very yummy! The second batch to go on the over came out better being cooked at about 13 minutes in my oven. My dough was very sticky when rolling. Just used a lot of flour on my hands.

Marinated Grilled Shrimp

Out of this world!!! I could eat these every day. There is just enough kick of spice with these shrimp. Would be great on a salad, side dish or as an app. The longer you marinate the better.

Spinach Pasta Salad

A different option for pasta or green salad. I used 6-8oz of flavored feta, 6oz of the black olives diced real small and used a parm olive oil dressing. I didnt think the salad stood up real well the next day, even after adding more dressing. Thought the spinch got soggy.
