Richard's Chicken Breasts

Fry 4 slices bacon till crisp. Remove bacon and saute chicken in bacon grease. Dredge onions in flour mixture. Add onions to cooked chicken and saute for 3 minutes. Make sauce by adding 1/2 cup chicken broth. Top with jalapeno cheese, cover and let steam for 5 min. Add crisp bacon and serve with rice.

Mama's Asian Chicken and Rice

Really delicious. Skipped the orange peal and Chinese 5 spice, but added 3 T Sriracha sauce and 3 T Szechaun sauce (San-J). Cut up onions into chicken stir fry. Would be good to add more vegetables, like peppers and carrots.

Grandmother's Pork Chop Dinner

Wanted to make this recipe with rice instead of potatoes, so made these changes... Cooked bacon (cut in half) in iron skillet till almost crisp. Added pork chops (season with s & p, minced garlic and seasoned salt) and cooked with bacon and onion till brown. Took out bacon and chops, poured in 1 cup uncooked rice and stir fried in grease 1 minute. Added 2 cups of hot water and 2 chicken bouillon cubes. Put chops back in with rice mixture and simmered half hour, covered. Serve with slice of bacon on top of chop. Yum!

Chili con Queso with Chicken (Similar to Carlos O'Kelly's)

OMG - this was so good. My family just sat around the table dipping Tostito chips in. Yum! I did not shred the chicken, just cut it into really small chunks and cooked it first in the frying pan, then added the rest of the ingredients as per the recipe.

Chicken Tortilla Lasagna

Started with uncooked chicken breasts, sliced. Sauteed them in oil and butter with onions, green pepper, jalapenos for about 20 minutes. Cut up chicken smaller while cooking with spatula. I only used Pace Medium Picante salsa, no tomato sauces. Transfer into casserole, making layers with tortillas and cheese as recipe states. Bake about 1/2 hour.

OK to get this perfect... 1 cup ice 1/2 cup 1% milk 1/4 cup vanilla ice cream 4 TBSP cool whip and the most important ingredient of all Hills Brothers Caramel Skinny Latte - 4 TBSP + 1 TBSP Hill Brothers Mocha Cappucino.

Marinated Baked Pork Chops

Sauteed in iron skillet in oil first. Sprinkled salt & pepper. Poured the sauce (I tripled the soy sauce, worcestershire, lemon juice and ketchup - but not the brown sugar) Did not put oil in sauce since I had already sauteed my boneless chops. Then I put a little onion on top and baked right in the iron skillet.

Chicken and Herbs

Made this with sliced potatoes around the edges of the baking dish, added melted butter to the olive oil to make more liquid and only used: onion, minced garlic, salt, ground pepper and extra dashes of hot pepper sauce. Poured over chicken and dotted the potatoes with extra butter. Bake.

Chutney Chicken

Made this with boneless chicken tenderloin pieces and sauteed them in oil first with salt, pepper and onion. Poured the chutney (Hot Mango Chutney by Crosse & Blackwell) over the top. Simmered on stovetop before finishing in oven.

Pilaf-Stuffed Pork Chops

I tried this for the first time and made some changes for my family of 4. I used 1 c of uncooked long cooking organic rice with 2 c of water and added 1 beef bouillon cube. Steam for 15 minutes. While cooking rice, I shredded the carrot and used a bit of diced onion instead of the zucchini. Then, sauteed the boneless chops in oil and butter with salt and pepper in a large iron skillet. When rice was done, I added the carrot and onion and some salt and pepper. I added the 3/4 c of beef broth, then I put the rice mixture on top of the pork chops in the iron skillet. After about 10 minutes in a 350 degree oven, I pressed the rice down all around the chops and cooked an additional 20 minutes. This was delicious. The rice was so flavorful and the chops tender.
