Cilantro-Lime Dressing

Just tried this, and it's delicious!!! I served it on spinach with grilled chicken and it was perfect. I used powdered ginger because I didn't have fresh, and it was still wonderful, better than my usual vinegar/olive oil + spices recipe.

Pear and Prosciutto Bruschetta

This recipe is amazing! I tweaked the method a bit to suit my tastes - I sauteed the onion and prosciutto first, then combined with the cheese to create a uniform mixture. I cut the baguettes in half instead of in slices because I found the bread was too small, but other than that it was great!

Pizza Casserole

Made this as the recipe called for, but with a few minor changes because of what I had on hand. I used prosciutto instead of pepperoni, ground turkey instead of beef (for a healthier version), and my husband can't stand cooked bell peppers so I left those out too. Delicious basic recipe, and made for wonderful lunch leftovers!

Roquefort Pear Salad

Just made this and it is likely my favorite salad - followed the directions exactly except that I used almonds instead of pecans, and they were delicious! After making the caramelized nuts, I let them cool overnight and then crushed them (easier on the teeth). I also soaked the cut up onions overnight in water to take out some of their potency (I'm very sensitive to raw onion).

Gramma's Apple Bread Pudding

I made this and it was delicious! I made only small changes, based on the advice of other reviewers: added ginger, allspice, and nutmeg. I also didn't peel the apples because that seemed like too much work, but I prefer it that way! I used sweet honey crisp apples.

Irresistible Whole Wheat Challah

(NOTE: make sure your water is hot enough to proof the yeast, a temperature of ~120 for the water should be added to the recipe). Otherwise, this recipe was surprisingly easy, and it's whole wheat flour! The kneading was the hardest part (and was very very easy to knead, compared to all of the other breads I've made before). The bread was beautiful when it came out of the oven, and was chewy and delicious. We made french toast with it the next day and it was delicious in that too.

Baked Scallops

My husband and I used Ritz crackers instead of the bread crumbs, which I really think add a lot. This is my favorite way to make scallops, even over pan searing, etc. We've tried both sea scallops and bay scallops, and find that bay scallops are much sweeter and tastier than the larger ones.

Slow Cooker Pulled Pork

I did almost everything the same, except that I didn't have root beer, so I used regular beer. I used pork loin (blasphemy, I know) because it was actually cheaper at the store, and much leaner. It pulled apart perfectly with this recipe. The only problem was that I didn't read the recipe thoroughly and forgot to drain... oops!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Best way that I've prepared chard! I used cherry tomatoes and used the whole can of garbanzo beans because I didn't want to save half for something else. Absolutely delicious! The lemon juice made it amazing.
