About this Cook
Hey there! I am currently an undergraduate student studying psychology at the University of Illinois at Urbana-Champaign. Recently, I got engaged to the love of my life, and we are looking forward to spending our future together. I love drinking coffee, spending time with my fiancee, reading, and learning new things. With my fiancee in a different state, and school and work keeping me busy, I do not have much time to devote to my hobbies(besides drinking coffee. Now that I will be out of the dorms (FINALLY!), I cannot wait to cook on my own. Because food is a necessity, I hope to turn cooking into a new hobby - one that I can practice everyday and make my own!

Cinnamon Coffee Bars
The end product was very dry. I was hoping they would come out with the texture of brownies/blondies, but I still think it was dry for a fruit and nut bar, which is essentially what this was (I didn't add the raisins, but I didn't miss them). Maybe next time I will add another egg or egg yolk. I tripled the amount of cinnamon, and it has an absolutely delightful cinnamon taste. However, I should have increased the amount of coffee I put in, as well, because the bitterness was non-existent (and I used French Roast coffee). Good start, though!

Ice Cream Muffins
I added some cinnamon to compliment the mild vanilla flavor; but the muffins were still not flavorful. I agree with the previous comments: the pre-baked dough was the consistency of biscuit dough; and the cooked muffins were not fluffy like a muffin, but dense like a scone. Even though the inside of the muffin was chewier than the outside, it was still dense and a bit difficult to swallow. I started cutting the muffins in half and spreading jelly, butter, or cream cheese on them to compensate for the bland flavor and unpleasant texture.
