Broccoli with Garlic Butter and Cashews

Reviewed: Sep. 11, 2006
This sauce is delicious. Not too sweet and the vinegar gives it an interesting tang. Not complicated to prepare either.

Pork Tenderloin alla Napoli

Reviewed: Feb. 15, 2006
The flavor of the sauce was very good but there wasn't much of it. Next time I will double the quantity of the sauce.

Buttermilk Pancakes II

Reviewed: Jul. 26, 2008
These are very light and fluffy. I added a bit of cinnamon, always do, we like pancakes that way. I'll make these again.

Dark Molten Chocolate Cakes

Reviewed: Jul. 26, 2008
These are the bomb! And super simple. I tried another Molten Chocolate Cake recipe from this site but didn't like them as well as these. The soft center of these seemed more like a pudding rather than a runny undercooked cake.

Cherry Tomatoes

Reviewed: Mar. 5, 2006
This was really good. I took advice from other reviewers and doubled the tomatoes and cut the oregano in half. I also added sliced fresh mozzarella. Will be making this again.

Pork Chops with Raspberry Sauce

Reviewed: Feb. 10, 2006
Delicious, quick and very easy. The sauce is light and just enough sweetness to enhance, not overpower the flavor of the pork. The cooking time was perfect too, I started with room temperature chops that were about 3/4" thick. We will making this one again. Thanks

Marinated Grilled Shrimp

Excellent recipe! Very simple with great results. I never have fresh basil so I substituted 2 tsp. of dried.

Mexican Baked Fish

Reviewed: Jan. 9, 2008
Great weeknight dinner. The salsa plays a big role in this since the fish is so mild, make sure you use one that you really like. I'm going to try this with other types of fish. Thanks!

Yakitori Don

Reviewed: Dec. 17, 2007
I have a small family so I use chicken thighs only instead of a whole chicken. It took way longer than the recipe stated to reduce the sauce. However, the flavor was great. Will make this again.

My family loved this. Although next time I will use filets rather than steaks. We hate bones!

Sauteed Garlic Asparagus

Reviewed: Apr. 25, 2006
I haven't found an asparagus recipe yet that I haven't liked. I LOVE asparagus so this earned 5 stars just because of that. But because my son liked it and he is not a fan of asparagus, this deserves extra points. The cooking method is just as simple as steaming it, but the garlic flavor was an extra bonus. One change I did make, I always saute with olive oil instead of butter (it's better for you). Thanks!

Kay's Shortbread

Awesome! This will be my shortbread recipe from now on. Very flakey and just the right amount of sweetness. Don't change a thing.

Almond-Crusted Halibut Crystal Symphony

Reviewed: Dec. 10, 2007
This is definitely a 5 star recipe even though I overcooked the fish a bit. Yes the sauce is fussy, uses a lot of dishes and takes some time to prepare, if you're looking for a recipe for a "special" dinner, it is worth the time and effort. Next time I will saute the fish for 2 minutes per side, 3 minutes was too long. And by the way, half and half works just fine for the heavy cream, considering beurre blanc typically doesn't have cream anyway. I'm also going to try this with other fish varieties. Thanks!

Garlic Cheese Chicken Rollups

Reviewed: Mar. 27, 2006
Few ingredients, quick prep and tastes delicious...that definitely earns 5 stars in my book! I even used about half the amount of breadcrumbs (to cut back on the carb count) and they were great.

Potato Soup V

Reviewed: Nov. 6, 2007
Good flavor. I sauteed the celery and onion first in 2 tbsps of the butter and I used 1 cup of shredded cheddar instead of 1 cup of half and half. I didn't think it needed any more cream and I like cheddar cheese in potato soup.

Broiled Tilapia Parmesan

Reviewed: Feb. 10, 2006
Very good, family loved it. I didn't use Tilapia, and I'm not really sure what type of fish I did used. I am living in France and don't know the French names for fish yet. However, I picked out a white fish that looked similar to Tilapia. Bottom line, if you don't have Tilapia, any delicate white fish will work great in this recipe! Thanks.

Kentucky Butter Cake

Reviewed: Feb. 8, 2006
Awesome! I have a Rum Cake recipe that is very similar. In that recipe you sprinkle chopped pecans in the pan before you pour the batter in. I am going to do that the next time as it does give the cake a finished look and it tastes good too. Also for hole making, a kebob skewer works great, the wooden spoon handle tends to tear up the cake.

Super easy and tastes great. Next time I will substitute melted butter for the oil, just to see how it differs.
