Port And Mushroom Sauce Chicken

Great flavor and easy to prepare. I took the advice of other reviewers and doubled the sauce. I also used dry tarragon. Although it wasn't noted in the recipe, the one thing I always do with chicken breast is pound it flat. It keeps it from being stringy, cooks more evenly and cooks quicker.

Blackened Tuna

This was so simple and yet so good. I had to cook much longer, we like our fish cooked through. We used the leftovers for tuna salad which was also very good.

Garlic Cheddar Chicken

Green Bean and Mushroom Medley

This is great way to fix green beans. Next time I make this, I am going to cut back on the butter a little (maybe 2 tbsp.) I thought it was just a little oily, however, the rest of my family didn't think so.

Golden Sweet Cornbread

This was great cornbread. And just as the name implied SWEET cornbread. I've tried many cornbread recipes and none of them had the sweetness that I was looking for. The outside was crispy and the inside was moist and flavorful.

Cheesiest Potato Soup

This was a great soup. The cayenne gave it a little kick that my family liked. I sauteed about 1/2 cup of chopped celery with onion only because I needed to get rid of it and I used half and half cream since that is what I had on hand. Next time I make this I will add one cooked diced potato after pureeing the soup. We like some chunks of potato in our soup.

Sweet Corn Cake

This tasted just like Chevy's corn cake. I even made a mistake and forgot to put the foil on before baking. But what is the foil for anyway? I pulled it out and was tasting it and it was great. I then realized I was supposed to bake it covered, so I put it back in the oven covered for another 10 - 15 minutes and it was still great. I'll make it again either covered or not!

Easier Chicken Marsala

This is totally easy and so good. The sauce is very light and flavorful, not heavy at all. The only change I made was to pound the chicken breast flat. I always do that, even if the recipe doesn't call for it. They cook much more evenly and they're so tender, not stringy. We will be having this one again!

Mushroom Sauce Baked Pork Chops

This gets 4 stars for flavor. We all loved the taste, but I still cannot seem to make a pork chop that is not dry and tough. I even beat the heck out of them thinking that would help. If you're a pork chop lover this one is great, I'm going to try it again with either chicken breast or possibly another cut of pork.

Aaahh! Potato Soup

This is a quick and delicious soup! We made this for dinner after skiing and everyone (including kids) loved it. We added crumbled bacon and sauted onion.

Chocolate Almond Biscotti

This is a good biscotti recipe. I used vanilla instead of almond extract and chopped pecans instead of almonds (it's what I had on hand) I also didn't dip them in chocolate, I always just sprinkle one side with sifted powdered sugar. We loved them!

Southern Candied Sweet Potatoes

Keep your eye on these or they'll get away from you. Everything was going great, but I started talking to a guest and wasn't paying attention and poof, they burned. But the part that didn't burn was really good. I like sticky, somewhat hard on the edges, candied sweet potatoes, and these were just that. I did have to remove the lid about half way through because the potatoes were getting too soft.

Cranberry Gelatin Salad

People who don't like cranberry sauce like this because it doesn't taste like cranberry sauce at all. It tastes like cherry jello salad. I had a cranberry jello salad at a party and I'm still looking for the recipe, this wasn't it. But if you like cherry jello, make this one.

Roasted Garlic Mashed Potatoes

I followed the recipe and I agree with other reviewers that there isn't enough garlic flavor. I want to try these again, but I'll use more garlic. I do, however, like roasting the garlic first, it mellows the flavor and makes the garlic sweeter.
