A Jerky Chicken

This didn't turn out for me. It didn't look anything like the picture either. Although my husband and son liked it, I didn't care much for it. I may try again, but grill instead of broil. **Update to my first review. I am now giving this 5 stars. I made some mistakes the first time I made this, so when its prepared correct it's delicious. The one thing I keep forgetting to do is hold out part of the marinade to pour over after cooking, but even without it the flavor is great. We also grilled it this time instead of broiling and it is definitely better cooked on the grill.

Pork Chops with Raspberry Sauce

Delicious, quick and very easy. The sauce is light and just enough sweetness to enhance, not overpower the flavor of the pork. The cooking time was perfect too, I started with room temperature chops that were about 3/4" thick. We will making this one again. Thanks

Broiled Tilapia Parmesan

Very good, family loved it. I didn't use Tilapia, and I'm not really sure what type of fish I did used. I am living in France and don't know the French names for fish yet. However, I picked out a white fish that looked similar to Tilapia. Bottom line, if you don't have Tilapia, any delicate white fish will work great in this recipe! Thanks.

Italian Wedding Soup I

This is an excellent soup and so easy. I do brown the meatballs first in the soup pot, remove them and saute the carrot (personal preference) I think this step adds flavor to the soup.

Kentucky Butter Cake

Awesome! I have a Rum Cake recipe that is very similar. In that recipe you sprinkle chopped pecans in the pan before you pour the batter in. I am going to do that the next time as it does give the cake a finished look and it tastes good too. Also for hole making, a kebob skewer works great, the wooden spoon handle tends to tear up the cake.

Baked Fish with Shrimp

My family loved this. I used Perch, I couldn't find Snapper and I added a little salt and pepper to the fish before adding the shrimp and sauce. After baking, I put under the broiler for just a few minutes to brown the top.

Scott Ure's Clams And Garlic

My whole family loved this. We prefer muscles, so I used them instead of clams. The flavor reminded us of muscles we had at a Restaurant in Paris. We thought the "sauce" could use a little salt. Next time I make these I will make that adjustment.

Yes on tender, no on pleasing the boss! I even added salt, pepper and brandy. Definitely no depth of flavor with this. I have other recipes that I'll use when the boss comes over.

Lentil Soup

Family loved this. We are not vegetarians though so I browned sausage with the veggies and used beef broth instead of plain water. I was not too sure about adding all the vinegar so I added in small quantities. I ended up using the full 2 tablespoons. I think the vinegar is the secret ingredient. Gives the soup a nice tang and enhances the flavor. Thanks.

Brandied Shrimp with Pasta

Excellent pasta dish! The combination of flavors are great. We liked that it was a light sauce rather than a heavy cream laden sauce for a change. I've made this many times. Some changes I've made are using bowtie pasta. The shape holds the sauce and mixes with the shrimp better. Also I've mixed shrimp and scallops and it is equally great.

Mexican Rice II

Maple Salmon

This is one of the better Salmon recipes I have tried. I used real maple syrup which is less sweet than maple flavored syrup like Aunt Jemima. The flavors balanced perfectly with the sweetness of the syrup and the saltiness of the soy sauce. Great sauce for the fish. Thanks!
