Honey Pork with Peppers

Fabulous! Easy to prepare and delicious. Directions were meticulous. My guy asked me several times, "You're going to keep this recipe, right?" :-) Served with Jasmine rice and colorful mixed veggies to round out the presentation.

Shrimp Scampi Bake

OOOOOO... we loved this! For two of us, I used a one pound mixture of shrimp, scallops, and calamari rings (available at Trader Joe's) instead of all shrimp. Cut the reminder of the recipe in half, of course. A definite keeper in our recipe file!

Chocolate Raspberry Cloud

Very tasty but time consuming to create. The heavy cream didn't sweeten up as much as I expected and gave the dessert an odd flavor. The fresh berries and syrup garnish disguised that but still I wonder if whipping cream wouldn't have been a better choice. My guy thought it was very good and worth the effort!

Raspberry-Almond Crumb Cake

Lovely! I made this for Christmas Eve and we enjoyed it with friends. I think next time I would add almond extract to the liquid mixture. The only almond flavoring, as is, is derived from the slivered almonds on top. That's just not almond-y enough for me.

Spicy Three Bean Soup

Effective and imaginative pairing of red wine and vegetable juice cocktail!!! Made up this recipe in my crock pot on New Year's Eve day, adding a 1/4 pound of Canadian bacon). Plugged in the crock pot when we returned from New Year's Eve celebration to allow for overnight cooking and had a marvelous, hardy soup for "noshing" during the football games! This soup is a keeper and one we'll return to many times in the coming months!

Vegetable Chowder

What a great recipe! Of course, I had to tinker with it a bit... used reduced-fat shredded cheddar cheese and skim milk. Also used the veggie broth option instead of chicken. We had a pound of Seafood Mix (Trader Joe's brand) defrosted so I microwaved that, let it cool overnight, rinsed and drained. Added to chowder near the end of the cooking time. Ended up with a Seafood Chowder, of course, but the basic recipe was such a great way to start. We had the leftovers for lunch the next day and I believe it was even better the second day!

Pumpkin Chili

I'm afraid I have to weigh in on the side of "too sweet." The recipe was certainly very easy and it makes a TON! Our palate for chili runs to the spiced not the sweet, so I had to add 2 more tablespoons of chili powder, some cayenne and cumin... about a teaspoon each. The pumpkin is a fine idea for a thickener but I would leave out the pie spice, as recommended by other reviewers, and cut back on the sugar.

Tasty Orange Chops

We really did like it! :-) The orange flavoring complements the bbq sauce and is very subtle. Superb on pork, will try it on boneless chicken next.

Cajun Style Baked Sweet Potato

Using some of the suggestions from other reviewers, I cubed the sweet potatoes and put them in a large ziplock plastic bag. Then I added the olive oil, using about 4 teaspoons, and rolled the potatoes around to coat before adding the spices. A couple of quick shakes of the bag and they were coated to perfection. I microwaved this dish, using 1/3 of the recommended cooking time. We loved the results! The spice list struck us as a similar to Emeril's Essence so I'll probably fool around with that plus the brown sugar next time.

Breakfast Crisp

We, too, found this recipe "just ok" in taste. Served at room temperature with cold milk or hot coffee the flavors are enhanced. We experienced all of deficiencies sited by other reviewers. It definitely needs something additional.

Baked Ziti I

AWESOME! I used ground linguica instead of ground beef. Found the end result a tad salty but we also used a lot of cheese. Nonetheless, my boyfriend's teenage boys gobbled it down and had seconds. The ultimate accolade! This is a wonderful alternative to lasagna. Anyone with an athlete who has to carbo-load before an event will find this recipe very useful. It is now part of my pre-race recipe file (boyfriend runs long distance races).

Angel Hair Pasta Chicken

Delicious eating and easy to prepare but it makes a TON! I knew I was in trouble when I drained the pasta (too bad I didn't figure that out before I cooked it). I use a cup of cooked pasta as a serving size for portion control. So, I got way more than 4 servings! Next time, I'll probably cut the pasta back to 8 ounces. We enjoyed the dish very much and will add this recipe to our pre-roadrace carbo-loading menus in the future!

Glazed Corned Beef

This is a winner! We tried it over the weekend, using the outdoor grill. We found the cooking time is a lot less (about half the time) and we had to keep adding water (an additional 2 cups) to the pan. About 45 minutes into the cooking, we moved it directly to the grill and seared the glazed corned beef on both sides. Then we returned it to the pan, added more water and continued cooking. Very tasty and super easy!

Hearty Breakfast Cookies

A big hit with our carbo-loading, carbo-loving runners! Like other reviewers, I used dates instead of raisins. I put about 2 tablespoons of Brown Rice Syrup in with the dates to add more complex carbohydrates. We thought the 12 cookie recipe itself could yield 24 cookies and still be filling so we'll probably do that next time. Awesome recipe... we'll use it often!

Irresistible Irish Soda Bread

Outstanding! My boyfriend's teenage boys are crazy about this Soda Bread. When I made the second time, I used four mini loaf pans, baked for about 25 minutes. Then cut each loaf in half to make a muffin-sized piece. Perfect for a take-a-long snack for their athletic events!

Chicken Spaghetti IV

Wonderful! I was searching for "something different to do with chicken" and selected this recipe. So easy and very tasty. I added garlic to the veggie saute and seasoned the chicken (Emeril's Essence) because I just do things like that! This is a great way to create a delicious meal and not heat up the kitchen!

Baked Orange Roughy Italian-Style
