Apple Crisp IV

Reviewed: Mar. 12, 2006
This is a family favorite. We just love the double crust. Take care to use very juicy apples, such as Macs.

Savory Pork Stew

Reviewed: Dec. 4, 2005
What a nice way to present pork roast leftovers! I usually go sweet with pork but this savory presentation was a wonderful change.

Honey Nut Bars

Reviewed: Nov. 10, 2005
Very easy to make and tasty, too! I used dried cranberries instead of the nuts, an interesting flavor combination with the dates! I'm looking forward to making them again with different dried fruits!

Salmon Pie I

Reviewed: Nov. 10, 2005
This recipe is excellent. DBF's been wanting a salmon pie for a while. I made it last night and he was thrilled. He thought it was a bit "fancy" with the rice mixture but loved every bite. I was thinking it might be nice to substitute some chopped broccoli or spinach for the mushrooms. I'll definitely be making this again.

Chicken In Sour Cream

Reviewed: Oct. 26, 2005
Spectacular! I used 4 boneless chicken breasts and skipped the browning step. Raves at our house, no leftovers! I think the lemon and dill additions are the key to this recipe.

Very Berry Muffins

Reviewed: Aug. 26, 2005
Very hardy muffin with a wonderful fresh-fruit zing! Not overly sweet, either, which is fine by us. I selected this recipe specifically for the oatmeal (filling, good fiber) and made them with raspberries instead of blueberries. The muffins vanished in two days, a sure sign this recipe is a keeper!

Peach Cobbler III

Reviewed: Aug. 26, 2005
Excellent! Very easy and took only minutes to prepare. I used very ripe peaches and cut back on the cinnamon sugar combination. This was delicious served when warm with a small scoop of vanilla ice cream.

Potato Tacos

Reviewed: Jul. 1, 2005
Big hit! I made these for a high-school graduation party and they disappeared!! Great flavor and so easy to make using commercially available taco shells.

Texas Ranch Chicken

Reviewed: Jun. 16, 2005
Delicious! We needed a fast dinner following a recent high school graduation. I made this ahead and it re-heated in the microwave beautifully. I added strips of red bell peppers and served over white rice.

Maple Muffins

Reviewed: Jun. 1, 2005
Huge hit at our house! Light, chewy, and sweet without being cloying. DBF is a maple-aholic and this recipe was an instant success. :-) I used Grade B maple syrup, as this is our preference and what was on-hand. Grade B isn't easy to find outside sugar houses, so when it's gone, I'll probably use whatever real Grade A is commercially available and add some maple flavoring.

Jenny's Jambalaya

Reviewed: May 26, 2005
Delicious! It's quite mild, which is nice. Everyone can add extra hot sauce to their servings, allowing for customized heat! :-) I made this in a slowcooker, adding the shrimp in the last half hour before serving. Low setting for 4 hours, then add rice and turn to high until rice is tender, set back to low and add shrimp. About 6 hours total in a pot that runs quite hot on low. "Your mileage may vary."

Apricot Chops

Reviewed: Apr. 8, 2005
Very good and so simple to prepare. I used frozen chops and a slowcooker, omitting the oil. Put the chops in first and poured the sauce over the meat. Cooked on low for 8 hours.

Gingerbread Cake

Reviewed: Feb. 24, 2005
Amazing! Easy, delicious and low-calorie. We had this last night (with a very light orange-flavored glaze) and it was huge hit. I used 3/4 cup of egg substitute instead of the 3 eggs.

Modenese Pork Chops

Reviewed: Feb. 17, 2005
Very good! I will cut back on the butter the next time I make it, probably by half. I'm going to try marinating the chops in the wine mixture and add some capers.

Slow Cooker Chicken Stew

Reviewed: Feb. 16, 2005
This was excellent! I made it last night. I precooked and de-boned six chicken thighs. Used a reduced-fat mushroom soup (instead of celery) and a can of chicken gravy (instead of the onion soup mix). Had regular potatoes, not red, so I peeled and diced them. An hour before serving I tossed in some frozen mixed veggies, mostly because I didn't feel like peeling carrots! Ended up with a colorful, flavorful stew that got raves!

Reese's® Peanut Butter and Milk Chocolate Chip Cookie Pie

Reviewed: Jan. 7, 2005
Very, very sweet! Like cheesecake, it is best served in thin slices. :) I'm considering making it again without the crust, using an 11 x 7 brownie pan to create a bar cookie.

Pineapple Cake I

Reviewed: Jan. 7, 2005
This cake is really tasty and very, very moist. So much so that I had to make it twice. Because the first time, I made two layers (for a birthday cake) and they crumbled apart out of the pans!!! :D The second time, I used the 13x9 inch pan suggested to a much better result. Will definitely make again. I gave the recipe 4 stars due to the pan constraint. The cake itself is worthy of 5 stars.

Chocolate Cavity Maker Cake

Reviewed: Jan. 7, 2005
This cake is truly awesome!!! The 15 year old wanted a "death by chocolate" birthday cake. I used those words in the search field and this recipe came up!!! I used sugar-free pudding, fat-free sour cream, and egg substitute. It was so moist and rich! Huge hit at our house!

Cherry Cream Cheese Pie

Reviewed: Dec. 6, 2004
This was sooooo good! I used light pie filling, fat-free condensed milk, fat-free cream cheese with a shortbread crust. The cheese mixture didn't firm up even overnight but I always assume that *diet* ingredients are the reason, not the recipe. Will definitely make again; this was a big hit!

Terrific Turkey Chili

Reviewed: Jul. 21, 2004
Very nice! I had to fool with it (of course) to accommodate ingredients on hand but the end result was tasty. Makes a bigger batch than 6 servings... we got at least 10 servings from one recipe. Not a problem with hungry teens!
