Salmon and Shrimp Cakes from Chef Bubba

What an intriguing and delicious way to present salmon! We loved these. I used a can of tiny shrimp (rinsed) instead of mincing larger shrimp and seasoned breadcrumb because that's what I had. Otherwise, I stuck to the recipe. I really appreciate that the cakes are baked and not fried. Thanks, Bubba!

Apricot Cookie Frosting

Just what I needed for a white layer cake that I filled with apricot/passion fruit preserves. I subbed in these preserves and omitted the pecans. This topped the cake perfectly, a keeper for sure!

Blueberry Apple Crisp

This fruit combination is very good, although I agree with a previous poster this isn't what I'd label a fruit crisp. I didn't get the topping to crumble; however, it did work up to a dumpling consistency and that worked just fine. Overall, a very tasty dessert.

Easy Platz (Coffee Cake)

Really easy and delicious coffee cake! Following the advice of previous reviewers, I used a 9x9 inch glass baking dish and starting testing for doneness at 45 minutes (my oven is fluky so baking is an adventure). I've used this recipe with blackberries and blueberries with excellent results each time. As is my habit, I also substituted one cup of Splenda for the sugar, a cup of whole wheat flour for one of the cups of all-purpose flour, 1/2 cup eggBeaters for the eggs, and one stick of light butter for the margarine.

Easy Oatmeal Muffins

Sometimes the simple pleasures are best! This is a wonderful "starter" muffin recipe or you can enjoy as is. I fiddled with the ingredients (can't help myself) to skinny it down and these muffins were absolutely as wonderful as the full-fat version. I really appreciate that these muffins aren't the cakey kind you can buy anywhere. Thanks for an excellent recipe!

Sweeter Muffins

Simple and delicious! Good by themselves, better with sauces, jellies, or gravies. These work for both sweet and savory dishes! They also baked up nicely with eggBeaters, Splenda, 1% lowfat milk and unsweetened applesauce substitutes for the full-fat ingredients. A true winner!

Molasses Bran Muffins

Another happy customer! These make for a delicious, low-calorie breakfast. I omitted the raisins (by request). I'll bet dates or dried currants would also be tasty but DBF wanted "plain" this time. Substituted 1T of ground flax seed for half the oil; used 1/4 cup eggBeaters (r) instead of the egg; both of these are my "usual" procedure with any recipe. Next time, I'll add the cinnamon suggested by another poster; I've made a note on the recipe to do that.

Butternut Squash Pizzas with Rosemary

What a find! I used an oat bran pita bread instead of the pizza dough and pre-cooked/mashed squash in place of the sliced squash. Once they came out of the oven, we topped with more diced veggies. Excellent springboard for creative lunches!!!

Quinoa and Black Beans

What a lovely, versatile recipe! I added red peppers and tomatoes and served on tortillas with salsa, sour cream and shredded cheese. I can imagine adding all kinds of fruits and veggies or just enjoying as is. Definitely a keeper!

Tommy's Ham Casserole

What a nice way to use up leftover holiday ham! I read the previous reviews and seasoned to our taste (adding 1/2 cup sour cream, 1/2 cup Parmesan cheese, 2 Tbsp spicy mustard and salt/pepper). An excellent way to enjoy this all-American comfort food. :)

Pear-a-dise Muffins

We liked these. They are very tasty when added flavorings (suggested by previous reviewers) are used. I doubled the amounts of pears, cinnamon and nutmeg, added a tablespoon of ground flax seed, and used vanilla yogurt instead of plain yogurt. To skinny it down for my diet plan, I used unsweetened applesauce (for the oil), 1/4 cup egg substitute for the egg, and fat-free yogurt. This is a keeper!

Chicken Quesadillas

Another 5 star rating! We used this recipe as the base for a "build your own" dinner. Each family member customized his/her own before the cooking step. We had sliced black olives, salsa verde, chopped chile peppers, and hot sauce as "add-ons." Served with salsa, sour cream and refried beans.
