Tomato Curry Chicken

The first time I made it I wasn't so sure. I made it a second time with about half the curry, and it was much better! I have also tried this with porkchops, and it's equally as tasty! The parmesan cheese really gives it a unique flavor! I think next time I will try this in the slow cooker, and am expecting great results!

Marbled Pumpkin Cheesecake

This was my first attempt at a 'cooked' cheesecake. WOW!!! It was SO moist and the flavor was unbelievable! Not too sweet...just right! The gingersnap crust gave it such a nice flavor. I usually don't eat the crust on my cheesecakes, but I gobbled this one up!

Feta Cheese and Bacon Stuffed Breasts

I've made this twice now. It has a nice flavor, although I think it needs a bit more of something - haven't figured it out yet. The feta and bacon go great together. Just make sure not to overcook it, because it can get realllly dry, even though there's bacon in it. The second time I made it, I wrapped the bacon around the chicken breast and it turned out great! I actually prefer it this way now. The bacon was nicely cooked with a slight crisp, not soggy like when you cook in inside the breast.

Fired Up Southwest Fajitas

Wow, these were the best fajitas I've ever made! I definitely recommend using flank steak as it turns out SO tender. I marinated mine for about 30 mins, then seared it on the BBQ over high heat. I only cooked it a few mins per side, so that the meat was still pinkish-red inside. I also grilled the veggies on the BBQ. YUM! This had such an authentic taste to it. I probably wouldn't have liked it as much cooked on the stove though. I think BBQing everything makes all the difference. I'm going to make these again in a few days. My fiance came home from a business trip and had the leftovers today and he LOVED it. The lime adds a nice touch too.

Champagne Cake With Buttercream Icing

WOW. This is one amazing cake! I made it for my fiance's birthday and it was a HUGE hit. I could have easily eaten it all myself! I'm not sure why others are having 'texture' issues, as I found this to have the perfect texture! It has a great homemade taste and it's so moist. The champagne gives it such a great flavor. I made two 9" round cakes (with a little bit of batter left over) which made a double-layer round cake. Make sure to drizzle champagne on them - I poked holes in the cakes and drizzled a bit more than the recipe asked for. This really added flavor and moistness. I can't wait to make this again!

Awesome Sausage, Apple and Cranberry Stuffing

WOW! This is delicious! Everyone loved it and there were NO leftovers, unlike other years where the stuffing gets tossed. I used Jimmy Dean sage sausage instead of the turkey sausage and 1 box of cornbread stuffing instead of the 1 1/2 cups whole wheat bread. I also used a 50/50 mix of chicken stock and white wine to moisten the stuffing. I cooked it in a crockpot for about 3 hrs on high, adding a bit of liquid every hour or so. The cranberries give it such a nice flavor without being too sweet. I omitted the turkey liver. I'll definitely be making this again!

Tangy Honey Glazed Ham

I didn't care too much for this. The orange flavor was too overpowering and I didn't even use the full amount! If I were to make it again, I'd probably just leave out the zest and only use the orange juice. I might also cut back on the dijon mustard - maybe 1 tbsp instead of 2.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This was really good, although I made a few adjustments. First, I sauteed fresh spinach with a crushed garlic clove in some olive oil. The cheese I used was one that I found in the gourmet cheese section at the market. It was a layered brick of blue cheese/old cheddar. The cheddar really helped keep the flavor mild. I think using the full amount of only blue cheese would have been overpowering, like others have mentioned. The chicken breasts I used were de-boned, but still had the skin on. I put the stuffing underneath the skin, then sauteed in a pan (without the flour). I finished these off in the oven. I will make this again.

Chicken Pot Pie IV

This was delicious! I used the Campbell's cream of chicken & mushroom blend. The only thing I would suggest is lowering the heat (maybe 375* or 400*) and cooking it a bit longer. I noticed my pie was not quite hot in the middle, but the crust was getting really dark. I will definitely make this again!

This was OK. I made the microwave version and it was very 'chalky' between the teeth. Maybe the stove-top version is better? I'll probably try a different recipe next time.

Perfect Pumpkin Pie

This is SUPER easy to make and comes out great! I followed the directions exactly and it tasted wonderful. I'm not sure why some people think it's "bland". The spices were perfect. The only thing was that it had a little sweeter taste than I would have liked, but I guess that's to be expected with the condensed milk. I might use a little less next time. I will definitely make this again. I'd also use a deep dish pie crust because I had some filling left over when I used a regular crust.

Good Old Fashioned Pancakes

Delicious! I've tried several different recipes and this is by far the best. I served this with butter and some real maple syrup from Quebec. YUM. The recipes only made 4 pancakes though, so I will double the recipe next time. UPDATE: I made these again and doubled the recipe. This time I made the Blueberry Sauce from this site. Fantastic!

Mouth-Watering Stuffed Mushrooms

These are some of the best stuffed mushrooms I've tasted. I make these as an appetizer when we entertain and guests always ask for the recipe. So easy, yet so flavorful! Just the right amount of spicyness.

The Best Rolled Sugar Cookies

Delicious! The cookie cutters I used were rather large, so I ended up having to cook these around 12 mins and the batch made 35 cookies. I'd definitely make these again.

Cream Cheese Cookie Cups

Wow, these were gobbled up in no time! I brought them to a Christmas party and everyone was impressed and asking for the recipe. I do have to admit it was a little time consuming forming and pressing the cookie dough into the cups. The chocolate chips really made it difficult to press down, and the dough was really sticky. Maybe next time I'll try with sugar cookie dough. They do puff up quite a bit when cooking, so don't be alarmed. You just need to press down the middles after you take them out of the oven and before they cool. A trick to taking these out of the pan...twist them out slowly instead of pulling up on them. They won't break this way. The filling was super easy to make and delicious!
