Thick Spaghetti with Marinara Sauce, Arugula and Parmigiano Cheese

What can I say. I was skeptical of the store-bought marinara sauce since it never comes close to tasting like the fresh stuff. I made this partly out of curiosity, and partly bc I needed to use up some arugula and was craving pasta. This recipe couldn't be easier and it comes out tasting fantastic! I followed it exactly as written. The arugula adds a nice peppery kick to the sauce. Give this one a try! It's great for days when you don't want a lot of fuss at dinner time.

Fragola Pazzo (Crazy Strawberry)

Excellent! A nice change of pace and I loved the addition of black pepper. Don't omit it! I have a pantry full of flavored balsamics, so I ended up using chocolate balsamic and it was perfect. Next time I will try it with espresso balsamic. A very simple dessert, but I can see how it would wow guests! Thanks for the great recipe Sunny!

Sassy Sangria

As much as I love sangria, I didn't think it'd be a good idea to use a full gallon of wine for just the two of us. I ended up scaling this down for 1 bottle (1/5th of recipe)of wine. I love the use of pineapple juice and pineapple chunks. I ended up adding in the full 8oz can of pineapple chunks, otherwise, 1/5th of the can only had me adding 3 chunks to the whole sangria! I also found it to be a bit too tart, so the full can of pineapple took care of the needed extra sweetness. A simple and tasty sangria. I'd recommend adding in more pineapple and letting it sit for an hour or two for the flavors to blend. I didn't like it as much when I first mixed it, but after it sat for a while, it really developed a nice tropical undertone.

Pineapple Rocket Salad

Wow, this one's a winner! I made it for company and they were all super impressed with it. I had several requests for the recipe! What an amazing blend of flavors. I was unsure about the cilantro but don't leave it out! It really adds a nice touch to the overall flavor. This was eaten so fast I couldn't even take a picture. Next time, because there will be a next time! Super simple and very impressive!

Cherry Coconut Smoothie

I didn't like this as much as I thought I would, but it was refreshing. I don't like overly sweet drinks, so the sweetness level was fine for me, however I think most would prefer it a bit sweeter. I like that it's low cal too. You don't really taste any coconut, so if I make this again I'll use coconut milk instead. I wouldn't call this a smoothie, really. It's more slushy and icy.

Simple Avocado Milkshake

The flavor is PERFECT. No need to make any changes. Note the servings are kind of small. For me, this was more like 2 servings. Super simple to make with ingredients I always have on hand. Be sure to use really ripe bananas for added flavor. Next time I will freeze a cut up banana first to make the shake colder because after blending it was room temp. Very smooth! This would also be tasty with almond or coconut milk. Thanks for the great recipe!

Chipotle and Adobo Pickled Eggs

I loved the change of pace from the usual pickled egg. That said, these aren't spicy at all, for those who are scared to try them. On the heat scale, they were about a 1. I ended up adding 2 whole peppers into the jar and that took them to about a 3-4 on the spicy scale. Be sure to strain the brine or else you will get a lot of sediment in your jar.

Sweet and Spicy Salmon with Grapefruit Salsa

This is a winner all around. If you've never sectioned a grapefruit before (with a knife), google for directions. So much better than peeling the grapefruit and pulling apart the sections that covered in the membrane that can be tough to chew. This was not spicy at all. Next time I will add more cayenne to get a bit of heat This would also be very good grilled. Instead of baking at 375 for 15-20 mins, I much prefer the flavor of broiling it for 10-12 mins. This gives it a nicer crust with moist center. Do not overcook salmon!

Best Black Beans

Great flavor for such a simple recipe. I took others' recommendations and rinsed the beans and used about 1/3-1/2 cup of chicken brother. IMO, 5 mins is not nearly long enough to cook the onions. I ended up simmering the beans for about 15 mins with a lid on the pot, then I took the lid off and simmered an additional 5 mins to thicken everything up. I added the cayenne with the garlic and onions, and stirred in the cilantro right before serving. A keeper!

Tomato Pepper Sauce

I found myself looking for a way to use up a bunch of tomatoes I had on my counter and stumbled across this recipe. It has a nice, fresh flavor. I added in 1/2tsp of sugar as suggested by another use, and I found it to be necessary. I also added in fresh basil, which definitely kicked this sauce up to the next level. I served it over whole wheat spaghetti. For my tastes, I had to cook the sauce about 35 minutes, the last 15 mins with a lid, because the onions weren't quite done. Next time I will try this served over bread as suggested. Very simple!

Brownie In a Mug

I've tried quite a few mug cake recipes and this is by far the best. If you're expecting traditional brownie taste/texture, you'll probably be disappointed, but c'mon, this is a 100 second microwave recipe!!! I took the other reviewers' recommendations and did not use olive oil - I used butter instead, well clarified butter to be specific. I also added a splash of vanilla extract. When it was done, I took a taste and was immediately impressed. It was slightly crumbly, so I poked holes in the top with a chopstick and drizzled half and half over it. To die for!!!! The next time I made it I only cooked it for 1 min 30 secs and that was perfect. Thanks for the great recipe Tankyy!

Silky Strawberry Smoothie

I enjoyed this smoothie and how easy it was to make. I made it exactly as written, including the optional 1 tsp of agave nectar. This isn't a very sweet smoothie, so if you prefer sweeter, you'll likely need to add in more agave, or honey would be delicious too. I used a very ripe banana, for added sweetness. I recommend putting the tofu in the blender first, otherwise having the fruit at the bottom makes it harder for the blender to get going.

Homemade Seasoned Salt

This is a really tasty blend, easily made with spices you already have on hand. I made a half recipe which was enough to fill half a standard size spice jar. Excellent on roasted chicken and potatoes, eggs, anything really! I put some on my steak tonight and it was delicious! I can't wait to experiment some more with it!

Quick Salmon Deviled Eggs

I expected to like these a lot more because I love smoked salmon, and I really like smoked salmon cream cheese. Once everything was put together, I thought they were good, but not anything I'd likely make again, at least not without some tweaking. This is a great base recipe though. It definitely needs "something", I'm just not sure what. Salt and pepper helped once I added them. The salmon taste is very mild like the other reviewer mentioned, so don't be afraid to try this recipe. I think these would be quite tasty with capers. I had to add in extra mayo because the filling was too dry. The are definitely quick and easy though!

Miso-Glazed Skirt Steak

WOW!!! What's not to love about this!?!? This was of the best skirt steaks I have ever eaten, and I prepare it often using many different recipes. I made it exactly as written and it was perfect - no changes necessary - but I wouldn't expect any less from Chef John! Very tender and flavorful. I'm not sure why the other reviewer's steak was tough. Skirt steak needs to be cut against the grain. Miso paste can be obtained from any Asian market in the refrigerated section. Sure, it's not available in your everyday grocery store, but no reason to rate the recipe down for that! I'll definitely be making this for company and I know they'll be impressed!

Cardamom Maple Salmon

What an amazing recipe! I made it exactly as written, except that I grilled it outdoors instead of cooking in a pan. The flavor was outstanding. The cardamom really takes this to another level, so don't leave it out! It's a pricey spice, but well worth it! I will be making this frequently, especially for guests because it will definitely impress. Next time I will try it with the orange zest, as suggested. Thank you for the great recipe!

Garlic-Sauteed Asparagus

Pink Flamingo Yogurt Smoothie

I thought this was really good. It's definitely not a sweet smoothie, which is perfect for me because I don't like overly sweet things, but others might want to add more honey or use a vanilla yogurt. I used Greek non-fat yogurt and the smoothie came out really smooth. This makes more like 2 servings instead of 4, unless you only like a really small glass.

Overnight Chai Oatmeal

The flavor is dead-on chai and smells delicious! I had to add a bit of sweetener right before eating bc I used unsweetened almond-coconut milk. This definitely requires way more liquid though. I made it exactly as written and ended up having to add another 3/4 cup of milk. I made it the night before around 11pm and when I went to eat it in the morning around 7am, it was one big solid mass that could barely be stirred. With the additional milk though, it was still thick, but a very good consistency. Normally for overnight oats, the standard guideline is a 2:1 ratio of liquid/yogurt to oats, so this recipe would work best with 2 cups of milk. Cardamom is quite pricey, but it definitely makes this recipe so don't leave it out!

Honey Vanilla Grilled Sweet Potatoes

Oh my goodness these are good! I was immediately intrigued when I saw honey vanilla in the name and knew I had to try these! The vanilla extract really brings the potatoes to a whole other level of delicious! I was a little worried 2 tbsp of cinnamon would be too much, so I ended up using just over 1 tbsp, and in retrospect, 2 would have been fine. I love that these are grilled (although they could easily be made in the oven) and are the perfect pairing for grilled salmon or pork. A great way to prepare sweet potatoes in the summer months!
