Great Grilled Smoky Vegetables with Avocado and Goat Cheese Crumbles

I'd give this 10 stars if I could! This is BY FAR the best recipe for grilled veggies I have ever tried! Hubby agrees too! I followed the recipe exactly as written, except that I used more cayenne (probably around 1/4 tsp - even that wasn't spicy). I'm already dreaming of the next time I can have this! I wouldn't change a thing! I love the sweetness of the peppers combined with the freshness from the basil and creamy goat cheese and avocado. This is the kind of recipe that will thoroughly impress guests.

Feta Cheese Turkey Burgers

I was really impressed with this recipe! I made sure to make it while hubby was out of town since he's not a fan of olives, but I bet even he'd like these! Instead of oregano, I used greek seasoning. I thought 2 tsp was a lot, but it turned out to be the perfect amount. These are very flavorful and moist too. Mine definitely did not take 10-12 minutes to cook. Don't overcook these or they'll be dry. I think next time I'll take the other reviewers' recommendation to top with tzatziki sauce. This one's a keeper!

Greek Salad with Spinach & Feta Chicken Sausage

Hubby and I both said the same thing - sausage in salad? Who knew! It turned out delicious! I used a different flavor sausage and cooked them on the outdoor grill. Yum! I also made my own dressing with olive oil, lime juice and oregano. A perfect summertime meal!

Mayan Couscous

Hubby was super impressed with this one (he's the pickier eater in the family) and I loved it too. I served it with some grilled salmon...yum! I followed the recipe exactly as written. Next time I'd probably add more cumin, jalapeno and lime. Those flavors weren't really coming through for me as much as I'd hoped. I might also add raw garlic instead of roasted to get more flavor. Overall, a great recipe! I'd make it again!

Garlic Chicken Sausage and Summer Vegetable Saute

Very tasty recipe! It came together quickly and had tons of flavor. I wasn't sure about the vinegar at first, but I love the dept of flavor it gave the meal. I didn't have any polenta, so I served this over quinoa. Yum! I didn't make any other changes. I would definitely make this again.

Hermano Roberto's Simple Salsa

So simple yet so delicious! It has a nice amount of heat, without popping your eyes out. The only tweak I made was to add a bit of salt since I used garlic powder instead of garlic salt. I used diced tomatoes, so I only had to blend for about 8-10 seconds. I made some baked tortilla chips with whole wheat tortillas. So good! I gave hubby a taste and all he could say was WOW! This is a keeper! It's a nice recipe to have on hand when unexpected guests stop by.

Italian Chicken Sausage Stuffed Portabellas

What an impressive recipe! These mushrooms taste like they took a lot more work than they really did! Super quick to make. This was my first time trying the Al Fresco italian sausage and I'll definitely be buying it again. Makes a great last minute appetizer when unexpected guests pop in!

Fiber One® Chocolate-Peanut Butter Haystacks

SUPER easy to make, and delicious too! An (almost) guilt-free snack! I love the added fiber and the calories are low too! I made half the recipe with no problems. Took all of 5 minutes from start to finish! I brought these to work and they were gone in minutes.

Sausage Stuffed Jalapenos

I made these for a dinner party and everyone raved about them, especially the men! They didn't turn out very spicy, so even those who don't like spicy food ate these. So easy to make. The only annoying thing was because of the rounded bottoms, several of the pepper halves wouldn't sit still and kept turning on their sides, causing the filling to ooze out. I'd recommend taking off a very thin slice off the bottoms (a mandolin would work great!) to help them stay put. I also ended up cooking them a bit longer (30mins), but at a lower temp (400*). Otherwise the peppers weren't fully cooked.

Raspberry and Almond Shortbread Thumbprints

Very good cookies, and easy to make too! Make sure the dough is cold before putting in the oven, or they will flatten out too much. I used a seedless raspberry jam and the cookies turned out perfectly. The only thing I had to do different was use WAY more milk for the glaze. One teaspoon is not even close to being enough. I ended up having to use at least 5 tsp. I'd also wait at least 5 mins before drizzling the cookies. Otherwise the cookies are too hot and the glaze ends up melting and pooling in the middle of the cookie.

French Onion Soup Gratinee

Delicious soup, but a little time consuming! A perfect marriage of flavors, but I think next time I will use 48oz beef and 14oz chicken (instead of the reverse as stated in the recipe) since I like a more bold flavor.

Crunchy Chicken and Gravy

I was pleasantly surprised by this recipe. It almost sounded too simple to be this flavorful! Hubby kept commenting how good it smelled as it was baking and with his first bite he said "YUM!" The outside got nice and crispy and the crushed stuffing gave it a delicious flavor. I served it with roasted sweet potatoes and it was almost had a Thanksgiving dinner vibe.

Tasty 2-Step Chicken

I was not a fan of this one. I read the reviews that said it was bland, and decided to pre-season my chicken with garlic and onion powder, salt and pepper. It STILL came out bland, so I can't imagine the flavor without these seasonings! All I had in the pantry was Healthy Request cream of mushroom, so that may have contributed to the lack of flavor. If I ever make this again, I'll definitely use the regular cream of mushroom soup. I'd also suggest using chicken broth instead of the 1/2 cup of water to add more flavor. It was really easy though, I just think this "2-step chicken" needs a few more steps.

Cherry Cream Cheese Pie

My mom used to make this when I was a kid, so I was thrilled to stumble across this recipe. I find 1/3cup of lemon juice to be too much, so I cut it back to 1/4cup. If I don't have a graham cracker crust in the house, I simply put the cream cheese in casserole dish, then top it with the cherry filling. Super easy and delicious. I'm guessing those that are having problems with the consistency are using evaporated milk instead of condensed. BIG difference.

Classic Stuffed Peppers

Very easy to make! I didn't have any spaghetti sauce, so I used tomato sauce instead. Just be sure to add extra seasonings (more onion, fresh garlic, etc) and some extra salt if you use tomato sauce. I like that you don't have the extra step of precooking the meat and rice. A real timesaver!

Cheesecake Lemon Bars

Y-U-M. I've never been a huge fan of anything lemon-flavored, but decided to make these anyway after a friend told me about them. They are amazing! Not too tart, not too sweet. I wouldn't change a thing. The cream cheese layer goes so well with the tangy lemon. A perfect summertime treat.

I used cranberries instead of the raisins and I love the little bit of color they provided. The bacon is what makes the salad, so don't omit it! Perfect all around, I wouldn't change a thing. Pulled Chicken Crescents

Super easy to make, and pretty tasty too! I threw a frozen chicken breast into some chicken broth and poached it on the stove. One breast made exactly 1 cup of cooked shredded chicken. I followed the recipe as written, except I left out the egg step. I found it easiest to divide the mixture evenly across all eight wraps first. Then, instead of rolling the whole thing, I picked up the pointed end and brought it up and over the chicken. No mess that way.

Zesty Italian Crescent Casserole

Overall, this was a pretty good dish, but like others, I added a few seasonings to it. When browing the beef and onions, I added 2 cloves of garlic, salt & pepper to taste, and a sprinkle of seasoning salt. I used a store-bought pasta sauce with onions and mushrooms. Everything else was followed as written. The crescent rolls I used were the buttery flavor, but I think next time I'll just use the regular. I wasn't too fond of the sweet buttery taste. Thankfully the sour cream layer really helped to balance out the flavors. Hubby really liked this dish and asked me to make it again. It's very quick and easy!
