Master Pizza Dough

This is my go-to pizza crust recipe now. It comes together so quickly and turns out great. I make it just as written and it's perfect.

Kim's Summer Cucumber Pasta Salad

This was SO good! I've never made anything like this before but definitely will again. I used a mandoline to slice the cukes and onions nice and thin and I think that was key. The only reason I took off one star is that the recipe made WAY too much dressing for the amount of other ingredients. Maybe with double the pasta and veggies it would work but not with this amount. Still, I will for sure make this again, with half the dressing.

Easy Authentic Mexican Rice

The large amount of garlic and onion powders ruined this dish for me. I think with a teaspoon of each instead of a tablespoon it might work. The powders formed a 'sludge' for lack of a better term on the top of the rice as it simmered and it wouldn't blend in completely when the rice was mixed. We actually threw out the leftovers, which we almost never do.

A Little Different Baked Mac and Cheese

This was pretty good. It's NOT at all like traditional mac and cheese so don't go into making it expecting anything like that. For us, it was a nice change of pace as a side dish. I made very minor changes - halved the recipe, shells not elbows and diced tomatoes instead of whole. Otherwise I made it as written. It could use some salt and pepper maybe, but then again the simple flavors of the tomatoes and cheese were kind of nice, not overpowered by a lot of other seasonings. I can see making this again.

Cajun Chicken Pasta

LOVE this recipe, it's restaurant quality, in my opinion. I made minor changes based on what I had in the house - used all red bell pepper, used regular onion instead of green, and I think I would keep it that way next time. Instead of heavy cream, I always use canned evaporated milk for sauces, etc. There's no loss of flavor/quality, just WAY fewer calories and fat grams. I think the spice level on this was just about perfect. Great recipe, and a definite repeat.

Ham, Potato and Cabbage Soup

This came out a lot better than I expected. I wanted to make something healthier and lighter after all the fatty holiday foods. This fit the bill perfectly. The only changes I made were to use homemade chicken broth rather than canned and to add some diced carrots because it looked like it could use a little color. Very good, simple recipe.

Overnight Coffee Cake

This was fantastic, way better than I expected. I made it exactly as the recipe was written, except that I used freshly ground nutmeg so I'm not entirely sure exactly how much of that I ended up with. I was very leery of the topping - brown sugar, nuts and cinnamon, really? I usually do a streusel topping. DON'T change it, give it a try, it's really way better than you'd expect. I'm not sure what the whole overnight refrigeration thing did for it, but it made Sunday morning breakfast a little easier. Great recipe, thanks very much.

Absolutely Fabulous Greek/House Dressing

LOVE this. I didn't think the vinegar taste was too strong at all. I did run out of red wine vinegar and had to make up the difference with balsamic but that was the only change I made, save scaling it back to 10 servings. I'm using it to make a pasta salad with feta, red onions, tomatoes, cucumbers and olives. It tastes fantastic. The *only change I would make is to reduce the black pepper as it's a little much but this is REALLY good dressing.

Fudge-Nut Oatmeal Bars

VERY rich and fudgy! I don't know how anyone would manage to fit all the ingredients into a 13x9 pan, let alone eat one of the resulting bars - it would be overwhelming! In the pan required in the recipe, these are perfect. I didn't change anything except not adding the nuts, since we don't really care for them. Very good recipe!

Cranberry Orange Bread

Excellent bread! The orange flavor was nice, and I like the fact that it uses less fat than the other recipes. The one thing I did change was to use half the nuts called for and that was just plenty. For us, a full cup would have been too much. I'll be saving this recipe!

Texas Sheet Cake V

This cake is unreal, SO good! It's moist and chocolatey, just what I wanted. I don't have anything super helpful to add. I do think it's a good idea to have all of the ingredients for both the cake and the frosting set out because once you get started it goes fairly quickly. Pour the hot frosting on the hot cake as soon as it comes out of the oven - it sets up pretty quickly. Most of all, enjoy!

Dutch Potatoes

This was delicious, I was so surprised! I followed it pretty much exactly, with the exception of adding black pepper and completely forgetting the chives at the end! If you slice your carrots thin enough, they should cook in the same amount of time as the cubed potatoes. Don't skimp on browning the onions, they add a ton of flavor to the finished dish. It doesn't need bacon, cheese, french fried onions, etc. etc. It's wonderful in its simplicity!

Garlic Baked Potato

Really enjoyed these potatoes!! I made only two minor changes. 1. Cooked on a foil lined baking sheet. 2. Used my Misto to spray olive oil on the potatoes rather than using the baggie. I usually 'bake' my potatoes in the microwave. These were a million times better!

Greek Pasta Salad

This was great! The dressing was fantastic - just what I was looking for. I made it exactly as directed, except I accidentally doubled the lemon juice. It was good like that so I'll keep making it that way! I mixed up extra of the dressing and marinated chicken breasts to grill, along with some asparagus. I can see making just the dressing to use for a marinade again! Great recipe, thanks!

Meatball Nirvana

These were good, and easy to make. I've always baked my meatballs, I just really like the texture much better than fried, and cooking them raw in the sauce grosses me out. I followed this recipe exactly, with the minor exception of using 1/2 tsp red pepper flakes instead of 3/4. The 1/2 just looked like plenty. I like the texture of the meatballs made without egg - they're not as mushy as the egg ones can tend to be. The only real problem I had was with the 'tangy' ingredients - the worcestershire and the Franks. I didn't think they combined well with the other flavors, and it was even more noticeable when the meatballs were added to red sauce. That's really the only change I would make. It doesn't need an egg, they won't fall to pieces without it. All in all, a good recipe and one I will probably use again, with the minor changes above. Thanks a lot for sharing, it's much appreciated!

Fabulous Wet Burritos

Really, really did not like these. I followed the recipe pretty much exactly. The burritos were good, the sauce just was not our thing at ALL. It really does remind me of the sauce from canned ravioli. I'm kind of sad, I've been wanting to try these for a while. I'm not sure what would make these more to our taste, more than likely will not even try.

Confetti Turkey Loaf

I made this exactly as the recipe states - the only change I made was to top it with barbecue sauce, because I'm out of chili sauce. I liked the vegetables in it, I'll definitely do that again. I would probably add a bit more salt, but other than that it's a good recipe. Thanks for sharing!

Cranberry Sauce

Very good! I've never made cranberry sauce with OJ before, I really liked it! Unlike others, I DO like canned cranberry sauce and this isn't a sub for it, any more than baked homemade mac and cheese is a sub for the blue box. It's a completely different thing! I used fresh orange juice, and zested the orange into the mixture as well. I also added a sprinkle of cinnamon. I would be very cautious about changing/lessening the amount of sugar here, if you're going to do that do it well enough in advance to be able to add more if needed. I used the full amount of sugar and mine was very tart. Just a great recipe, and one we'll make again!
