Easy Shake and Bake Chicken

We made it healthier by using boneless, skinless breasts and omitted the butter, using non-stick cooking spray. We loved it, even my picky DH was impressed. I served the chicken with mashed potatoes and cole slaw; all the taste of KFC at a 1/4 of the price!

Seafood Pasta Salad

I've made this for years but used canned shrimp and added finely chopped vidalia onion. It is still my son's favorite (most requested) side dish!

Quick and Easy Shrimp Fajitas

I actually skippd the taco seasoning...marinated the shrimp in crushed garlic and lime juice with chili powder. I cooked the peppers and onions then added the shrimp to the mix to cook until pink. I served with store bought pico de gallo - a mix of tomato, onion, jalapenos and cilantro. It was PERFECT!

My Country Style Steak

Changed it up some...Used low sodium beef broth in place of water, added sauteed onions and mushrooms and used garlic powder on the meat to season before ccoking. Hubby went back for seconds but I thought it needed some brightness...maybe parsley or some peppers?

Turkey 'n Stuffing Bake

Made this almost as written but hade to make a few modifications for my picky husband. I used cream of chicken soup, low sodium chicken broth and frozen broccoli florets. I only used the french fried onions on top as my dressing already had onions and celery in it. I baked at 350 for 40 minutes and then added the extra onions and baked for an additional 10 in a square 9 X 9 pan. Easily serves four adults.

Dave's Low Country Boil

Made this for dinner tonight; it was awesome! I added 4 garlic cloves and a quartered sweet onion to the water plus a whole lot of Old Bay. I started with 3 Tablespoons but that didn't look like enough so I free poured more in. (i grew up in MD where we use it instead of salt.) I used red potatoes, kielbasa, 2 ears of corn, 1 lb. of shrimp, and frozen dungeoness crab...made enough for 4. Served with tomato salad and fresh Italian bread.

Garlic Chicken Pizza

Finally a recipe the whole family will eat! My daughter in law is allergic to tomatoes so we left them off and the green peppers. I used sliced red and green hot cherry peppers instead because we like the heat and for color. I also added fresh minced garlic (I didn't have granulated) and Classico garlic roasted alfredo sauce with leftover Italian chicken. Will try again for hubby and me as written, it was that good.

Shrimp and Avocado Wraps

I drizzled the mayo combination over and added Pico de Gallo before rolling up the tortilla. Next time I would either grill the shrimp, marinated in garlic or add bacon for a bit more flavor.

Smothered Hamburger Steak

We are not mushroom lovers so I made with onion gravy instead. Finished in oven instead of stove top. Oh, and I moistened with V8 because hamburg was dry. Hubby went back for seconds...For us, it was a cross between salisbury steak and mini meatloaves.

Gina's Lemon Pepper Chicken

I also used more spice than the recipe calls for, browned the chicken and then baked, covered with foil for 30 minutes at 350. I did not need to turn the pieces that way. I served with pan gravy, baked potato, and spinach.
