QOB Veggie Enchiladas

Really good! I used homemade enchilada sauce, and I threw in a tiny bit of cilantro and green onions for fun, but I think even without those additions they would've tasted great!

Spinach Fettuccine with Sausage, Peppers and Olives

Very good, not too difficult to prepare. I used feta instead of parmesan simply because I had it and thought that since the rest of the pasta was Greek-style I might as well use a Greek-style cheese. Would definitely make again!

Roasted Vegetables

Awesome and works perfectly fine with dried herbs. To the reviewer who gave it a bad review because s/he must have used WAY too much dried herbs: keep in mind that fresh herbs have water in them, making them larger and less strong. Hence you always need MORE fresh herbs and LESS dried herbs. A teaspoon or less (to taste) in this recipe would be fine. That's what I did and it turned out delicious!

One of the best recipes I have ever made. The chipotle adds a delicious flavour and spice. I cannot wait until I can make this again. It was a favourite among the church folks I shared it with!

Momma's Wine Cake

Excellent, easy, and a hit among EVERYONE! I added a tsp of cinnamon on top of the nutmeg and it turned out extra delicious. It was so good that my friends couldn't stop eating it! I love the consistency and the flavour. Will definitely make again!

Spiced Butternut Squash Muffins

Yum! These were great! Similar to pumpkin muffins, but not the same. As for the reviewer who claimed that a half pound of squash was "a lot," I'm not really sure what happened because a whole butternut squash is only about three pounds anyway. My only problem with these was that after I took them out of the oven, most of their domes sunk back down. I'm not sure what happened, so I will have to try it again and see if I can improve them! Nonetheless, they tasted wonderful.

Rogan Josh, Lamb Shanks

This was really tasty, and I loved making it in a crock pot because I could just leave it overnight and it was ready to go! The sauce was slightly sweet and tangy, which was slightly surprising, but the tangy with the savoury meat was a good combination. I would make this again.

Elegant Penne with Asparagus and Shrimp

This was all right. It didn't turn out horribly, but it also wasn't something I was really excited about. I did find that adding tomatoes and mushrooms made it much more interesting, and when I did that, I had no problem with there being enough sauce (on the contrary, there was quite a bit).

Smoky Chipotle Hummus

Fantastic! I used two chipotle peppers instead of one for more kick and it was great! (Thank you for the tip that it was one PEPPER, not one CAN!) Probably my favourite flavour of hummus, and it was a hit at an event I cooked for the other day!

Vegan Corn Bread

Best cornbread I have EVER made! I have struggled to find good-tasting vegan cornbread, and simply none live up to the expectation I have of its taste and texture. Until I tried this one, that is! This is perfect. The tofu gives it that fluffier consistency I was missing with my close second favourite that involves flax seed as an egg replacer. When I made this, I substituted honey for the sugar. I should also add I thought i worked best to make in muffin cups instead of in a square baking pan. I loved it and have made it more than once! Definitely a "keeper."
