Roasted Butternut Squash Lasagna with Gorgonzola

This had a wonderful appearance and taste. I used a little bit less Gorgonzola than it called for and it still had a strong taste. I also used ricotta instead of cottage cheese since that is what I had on hand. I think a little chicken, sausage or ground meat would work fine in this dish, not that it needs protein.

Butternut Squash and Pecan Casserole

This is wonderful. I used coconut oil, sesame crackers, breadcrumbs and almonds on top because that is what I had and it still turned out great. I did precook the squash in the microwave to speed up the process.

Quick and Savory Tuna Burgers

My husband does not usually like tuna and I love it. We both really enjoyed these burgers. I made it exactly as listed except using granulated garlic since I ran out of whole. I also cooked them in olive oil. It didn't taste fishy at all!

Tom and Jerry Batter

Perfect as is. It is definitely worth the time. I cut this in half and it still made a lot. It is not 12 servings folks, it actually makes 192 servings when using 1 Tbs of batter per drink. It made Christmas Eve a delight, everyone was asking for more. We served this with brandy and hot water. Wow.

Spinach Chickpea Curry

Great. I didn't have curry paste, like some others, but I just used the reviews and whatever was in my kitchen. I substituted chicken for the tofu and regular corn with some cream since I didn't have creamed corn. Worked great.

Venison Chili

Excelent. My husband just told me this is the best chili he has ever had. I had to use what I had on hand since we live quite a few miles from town. I used venison summer sausage in place of bacon. I used round steak from our Elk this year. I substituted apple cider vinegar for the red wine vinegar. I also had vegetable base instead of chicken.

Caribbean Potato Curry

To be fair I didn't use fresh ginger since I didn't have it on hand. I used ground ginger. This recipe was good but I think it could use a little more to make it great. The flavor is very nice. It needs a little protein. I imagine it would be nice with some nuts or garbanzo beans.

Awesome! Love the sauce even without the Sake as others mentioned. I was out of ginger and I substituted pene for the spaghetti noodles and it still turned out amazing.

Quick and Easy Pizza Crust

This is perfect. I love the foot notes. I made it using 1 cup whole wheat flour with the herbs. I have made about 5 different pizza dough recipes and this is the only one that turns out great without precooking. We usually don't eat all the crust but this is perfectly done.

Marinated Venison

This is excellent. I would not recommend adding a half bottle of Worcestershire sauce as the recipe calls for. I added about 8 shakes and that was plenty. It is best to cook the meat until it bleeds through and then flip it until it bleeds on the other side. Venison is best when it is medium rare.

Kashmiri-Style Kidney Beans with Turnips

This was very good. I have to admit that, although I love Indian food, I don't make it often. I didn't have all of the spices. I didn't have fennel or garam masala. I made garam masala but I didn't have cardamom so it was not perfect but it was good. I think next time I would add a little more fresh ginger.

Beef Stew VI

I made this with venison instead of beef. I floured the meat with garlic powder, onion flakes, and pepper before browning as others have suggested. I didn't use bouillon cubes since they have msg, I used better than bouillon and that worked great. I added a little fresh parsley at the end with the rosemary. I only had flour to thicken since I was out of cornstarch. This is a great low-sodium stew recipe.

Spinach Rice

It was great and easy. I used fresh spinach and added it to the onion at the end of cooking. I also added a couple of small carrots. I would suggest mixing the soup, milk, and peppers in the skillet with the veggies to reduce the amount of dishes. It worked just fine.
