Balsamic Roasted Pork Loin

I used a reduced balsamic vinegar as that was all I had on hand. No other changes besides that. We really enjoyed it although the vinegar smell was getting to my dh as it was cooking. It was even great 2 days later!

Wisconsin Five-Cheese Bake

Peanut Butter Vegetable Chicken Soup

A very hearty soup! I read a lot of the reviews and made some of the suggested changes. I don't like peppers (or they don't like me) so I omitted them but added about 1/2 cup or so of chopped green onions. I sautéed the onions, garlic, about half the celery (I like my veggies on the firmer side but knew that sautéing them would add great flavor) and green onions, cooking until tender. I only had a 48 oz can of chicken broth on hand so I added to it 2 cups of water and two bouillon cubes. I didn't measure any of the other vegetable ingredients but if anything they were all more than what was called for. I added the chicken (Costco’s rotisserie chicken) in the second step. I also used about 3/4 cup of peanut butter. The soup tastes great! It's great the next day too. The only changes I will make next time is reduce the cooking time and add the chicken just before adding the peanut butter as the veggies were a little softer than I like and while the chicken wasn't tough it was a little over cooked. My picky Hubby loved it and so did my coworkers. Although it takes a lot of time chopping everything, it is well worth it. I will make more next time so I can freeze it.

Gourmet Tuna Salad

I've been making this tuna salad for years now. It's the only recipe I use. As some of the reviewers mentioned, sometimes the mayo/sour cream mixture is too much. I find alot depends on how much you drain the tuna. If the tuna is wet, you need less mayo, etc. I always keep capers and olives on hand just for this tuna salad!

Shrimp with Tomatoes and Feta Cheese

This is great. I use the frozen shrimp to save time. Don't be afraid to try the peppers. If you saute them long enough they don't seem to be that hot. My husband does not like spices and he loves this. Great reviews from everyone I've ever made this for.

Strawberry Tiramisu for Two

Thought this was so so. I couldn't get my husband or his brother to eat it. I had worked so hard making it that I ate it by myself. (well... not the whole thing!) I like the classic tiramisu much better.

Fettuccine Alfredo V

My husband says this is the best fettuccine yet. And I've made many. Fresh cheese makes such a difference. I must admit that I do not eat it. I'm addicted to too many foods as it is now.

Barbecued Beef

Made this twice with the pork and one time with the beef. Haven’t noticed much of a difference. Very tasty.However... I do recommend cutting way back on the vinegar as suggested. I double the sauce and only use 1/4 cup of the vinegar. To save time in the morning when I'm in a rush, I'll make the sauce and trim the meat the night before . The next day just put it in the pot and head off to work.

Slow Cooker Chicken and Dumplings

Made this last night. This was great. I used the suggestions of the cream of celery and cream of chicken mixed. And use chicken broth instead of water. It reminded me of chicken pot pie minus the crust. Very good the next day too!

To Die For Blueberry Muffins

I've made these a couple of times now. I double the blueberries and since I use the frozen ones I cook for another 5-10 minutes. To test if they're done I gently press on the top. When it springs back up I know they're done.

Original Irish Cream

This is a great recipe! I followed the suggestions of using only 7oz of Whiskey and used coconut extract instead of almond extract. Next time I'm going to try 6oz of Whiskey being as it was still pretty strong. Guess I'm a light weight! Very tasty.

Baked Pineapple Casserole

Loved this. Only used about 1/4 cup of sugar and this was still a little too sweet for a dinner side dish. Had to bake it at the same time as the ham so I cooked it @ 325 for 90 min. It turned out great and the guests (and husband) loved it! This is a keeper.

Sauteed Portobellos and Spinach

This was my first time working with Portobello mushrooms. I can not believe how easy and delicious this was. I made the mistake of buying the frozen chopped spinich. The spinich pieces were too small for the size of the mushrooms. Next time I will buy the whole leaf spinich. I doubled the recipe and added 6 or 7 garlic cloves. Everyone loved it!
