Black Bean and Corn Quesadillas

Absolutely delicious!! Easy to throw together, but a bit difficult to flip in the pan. If you have a quesadilla maker, definitely use it with this recipe. But it's just as tasty with the topping spilling over. :)

Basic Crepes

Crepe success! I went ahead and prepared the batter as listed, without added sugar. This way, I had the option of making more savory crepes (with melted cheese or sour cream) or sweet crepes (the jam or yogurt added the desired sweetness). I was even able to do some air flips! (The trick is to go all in--no hesitation.) The recipe made exactly 8 crepes, and they are filling.

Apricot Barbecued Chicken

Chicken in Sweet Pepper Sauce

Absolutely phenomenal. I used Moscato wine and canned (fired roasted) diced tomatoes. The chicken was just about the juiciest I'd ever had. Preparation was simple and straight forward. I served with rice, but there wasn't much juice left in the pan to pour over it. Perhaps I'll add a bit more broth and wine next time.

Easy Chickpea Curry

This was amazing. I followed the recipe to a tee (with the exception of using one chicken bouillon cube instead of two) and it was absolutely delicious. I served it over brown rice.

Chewy Chocolate Chip Oatmeal Cookies

Absolutely phenomenal. The best cookie I've ever made. I added and extra half cup of flour as many suggested. I opted for larger cookies and thus needed to do them for about 13-14 minutes in the oven, but the advice to leave on the cookie sheet for five minutes before moving to the cooling rack is paramount. I refrigerated the dough while I was waiting for the first half of the batch to bake, but did not refrigerate for a separate half hour. I took them to a group picnic and they FLEW. My partner was mad when I came home without leftovers.

Perfect Turkey

Made my first turkey ever using this recipe with great success. We didn't eat any of the veggies (I didn't have the right amount of them anyway), but it added good flavor to the meat.

Best mashed potatoes I have ever eaten. Can't wait to make them again. I kept them warm in the crock pot while preparing other dishes for Thanksgiving. Flavor and texture remained perfect--even for the leftovers.

Iced Pumpkin Cookies

My new favorite holiday cookie. I actually used only half the butter by mistake the first time I made else cookies, but they turned out perfectly so I'm sticking to that. They also taste great without the icing.

Chicken Apple Sausage with Cabbage

This was absolutely amazing. I used 3 cups of apple cider, as I imagined apple juice would be too sweet. The chicken apple sausage was pre-cooked, so I only heated them for a minute or so before adding the onion. Our grocery store didn't have Yukon potatoes, so I chopped up some small potatoes. It was too difficult to get the sausage and potatoes out from under the cabbage, so I just left them all in there as the cider cooked off. This left the potatoes a bit soggy, but the whole meal was scrumptious. The others I was cooking for don't typically like cabbage, but they went back for seconds on this one. Will definitely make again.

Tony's Summer Pasta

This was the perfect summer dish. I only made half the recipe and substituted halved grape tomatoes for the plum tomatoes. I also had some extra chicken from the "Easy Chicken Gyro" recipe on this site that I shredded and tossed in. I only added two cloves of minced garlic (for the half recipe) because of the power of raw garlic and because the chicken I tossed in was already heavily seasoned. On the side I made some yummy pita toast: --Slice desired number of pitas in half (yielding one layer of pita). --Spread pitas on a foil covered baking sheet. --Brush pitas with olive oil. --Sprinkle pitas with ground black pepper, ground dried parsley, and parmesan cheese. --Bake in the oven at 350 for 10 minutes or until crispy. Thanks Tony and all for the suggestions!

Roasted New Red Potatoes

Awesome! Can't get more taste for less effort. I added dried thyme and garlic powder in with the salt and pepper, as other reviewers suggested. I did throw in some onion during the last 10 minutes of cooking, though my onions probably could have afforded to go a bit longer. I will definitely make this again--one of the easiest, fool proof side dishes around.

Curry Stand Chicken Tikka Masala Sauce

Definitely lives up to the rave reviews and is worth the extra effort of standing at the stove. I used almost two full teaspoons of cayenne and WOW was that hotter than anticipated. Will probably use just one or one and a quarter next time. I also used a bit less cumin because it's not my favorite seasoning. I don't think I technically had enough chicken, but the sauce is yummy over rice just by itself. Thanks so much!
