Myra's Basil Chicken Stir Fry

This was really yummy! I echo the review of another view who would have like to have more sauce, but I also served it over sticky rice and it was delectable! Love, love, love all the basil. I didn't have enough spinach on hand as the recipe called for, but it was fine the way it was.

Spanish Rice

I'd give four and a half stars...much better than expected. I prepared the rice as suggested, substituted sweet red peppers for the green, and threw in some hot sauce because we didn't have any chili powder on hand. I also used oil instead of water for the sautéing. I'll definitely make it again.

Roasted Apples and Brussels Sprouts

Apples essentially turned into applesauce and the thawed sprouts were waterlogged and therefore soft after roasting. Still had a great flavor, though.

Tony's Summer Pasta

This was the perfect summer dish. I only made half the recipe and substituted halved grape tomatoes for the plum tomatoes. I also had some extra chicken from the "Easy Chicken Gyro" recipe on this site that I shredded and tossed in. I only added two cloves of minced garlic (for the half recipe) because of the power of raw garlic and because the chicken I tossed in was already heavily seasoned. On the side I made some yummy pita toast: --Slice desired number of pitas in half (yielding one layer of pita). --Spread pitas on a foil covered baking sheet. --Brush pitas with olive oil. --Sprinkle pitas with ground black pepper, ground dried parsley, and parmesan cheese. --Bake in the oven at 350 for 10 minutes or until crispy. Teriyaki Rib Eye Steaks

Great, easy marinade. My steak was a bit thicker than the recipe calls for, so the marinade burnt in the pan, but the meat was still great.

Burgundy Pork Tenderloin

3.5 stars. It's hard to rate this one precisely because I believed I overcooked it slightly, but overall the flavors were good. Celery was a nice touch. The gravy did not thicken as much as I would have liked.

Chicken Fajita Melts

Turned out pretty well, though I had to cook them for a lot less time as my broiler was quite compact and piping hot. Just watch what you're doing--otherwise you might burn the sandwiches to a crisp!

Fifteen Minute Chicken Chili

I was blown away with the taste of such an "easy" chili. I bought organic canned ingredients and followed the directions as indicated. Perfect servings for just the two of us, but if there were more people, I'd probably increase the recipe. Will definitely keep on hand for those weeknights without much time or energy for meal prep.

Absolutely delicious!! Easy to throw together, but a bit difficult to flip in the pan. If you have a quesadilla maker, definitely use it with this recipe. But it's just as tasty with the topping spilling over. :)
