Coconut Curry Pumpkin Soup

Some friends and I made this recipe en masse to feed hungry college and graduate students for a community meal. Very high reviews--and vegan and gluten free--two musts for our crowd. Will definitely make again.

Iced Pumpkin Cookies

My new favorite holiday cookie. I actually used only half the butter by mistake the first time I made else cookies, but they turned out perfectly so I'm sticking to that. They also taste great without the icing.

Great, easy marinade. My steak was a bit thicker than the recipe calls for, so the marinade burnt in the pan, but the meat was still great.

Baking Powder Biscuits I

Didn't have any shortening, so I used butter and reduced the baking powder only by a pinch in response to some of the reviews. Also drastically reduced the recipe to make only 4 biscuits. They baked up very well--not too dry, not too greasy. Used them as breakfast biscuits (heresy!) with the "Bacon Gravy for Biscuits" on this website. Though not a "traditional" match-up, they were still tasty. Good improvisation based on what we had on hand.

Bacon Gravy for Biscuits

I'm a yankee girl and don't know much about biscuits and gravy, but this recipe was easy, tasty, and no where near as salty-tasting as I was anticipating. I used five thin slices of bacon that produced a lot of grease. After removing the bacon, I turned off the heat, gradually added the flour, then started the heat up again as I added the cold milk (I eyeballed the milk, not sure if I used more or less than a cup, just watched for the gravy to lighten in color and reach the appropriate thickness). I had accidentally let the bacon cook a little long and worried that it might taste a bit burnt, but it didn't! Used Anne's Baking Powder Biscuits I recipe from this website because of the (lack of) ingredients I had on hand. Though not necessarily a "traditional" southern breakfast, it was still tasty and my Texas-raised partner was satisfied.

Best mashed potatoes I have ever eaten. Can't wait to make them again. I kept them warm in the crock pot while preparing other dishes for Thanksgiving. Flavor and texture remained perfect--even for the leftovers.

Great soup! It didn't even need the garnish. I used a red hubbard squash and the hardest part was getting cutting up the very dense flesh. Otherwise, a straightforward, easy-to-make recipe.

Black Bean and Corn Quesadillas

Absolutely delicious!! Easy to throw together, but a bit difficult to flip in the pan. If you have a quesadilla maker, definitely use it with this recipe. But it's just as tasty with the topping spilling over. :)
