Basic Crepes

Crepe success! I went ahead and prepared the batter as listed, without added sugar. This way, I had the option of making more savory crepes (with melted cheese or sour cream) or sweet crepes (the jam or yogurt added the desired sweetness). I was even able to do some air flips! (The trick is to go all in--no hesitation.) The recipe made exactly 8 crepes, and they are filling.

Black Bean Quesadillas

Simple, great-tasting, and filling treat. I made them for a casual dinner with friends and they were a hit--even among meat lovers (and this is a veggie recipe).

Blueberry Kuchen

Overall, pretty good, but very buttery. The batter is more moist than traditional German "Kuchen," but it is quite tasty. I took it to a potluck and it disappeared. Also, very simple to put together--an added plus!

Mom's Macaroni and Cheese

We found this recipe to be just so-so, though we do not profess to be mac and cheese connoisseurs. The consistency was a bit too mushy and the flavor not particularly unique. We won't make it again, but mac and cheese lovers might feel differently.

Spinach Enchiladas Verde

Awesome! I added black beans between the spinach and cheese and it was delicious. Also, a semi-easy tip for working with the corn tortillas...and yes, the flavor is absolutely worth it. Heat them individually on each side in a dry iron skillet until they are more pliable. My partner and I used an assembly line process where I heated the tortillas and he stuffed and rolled them. Placing them fold down eliminated the need for toothpicks. Will definitely add these to the recipe rotation.

Allspice String Beans

Great way to jazz up one of my favorite veggies. Watch out for overcooking. I had fewer beans than the recipe called for and I think I used too much water. :(

Burgundy Pork Tenderloin

3.5 stars. It's hard to rate this one precisely because I believed I overcooked it slightly, but overall the flavors were good. Celery was a nice touch. The gravy did not thicken as much as I would have liked.

Spanish Rice

I'd give four and a half stars...much better than expected. I prepared the rice as suggested, substituted sweet red peppers for the green, and threw in some hot sauce because we didn't have any chili powder on hand. I also used oil instead of water for the sautéing. I'll definitely make it again.

Basil Chicken Strips

Delicious! I added a bit of fresh garlic and an extra tablespoon of butter. I also used fresh basil that I happened to have on hand. I thought it was great, but my partner found the chicken a bit dry and added ketchup. Served with salad and pan fried potatoes.

Baked Salmon II

This is one of the best recipes I've found on the site so far. Salmon comes out juicy and flavorful with fool-proof preparation. One evening I didn't have time to let the fish marinade before cooking and it still turned out fine.

Cucumber, Mango, and Black Bean Salad
