Easy Gourmet Pumpkin Soup

Great soup! It didn't even need the garnish. I used a red hubbard squash and the hardest part was getting cutting up the very dense flesh. Otherwise, a straightforward, easy-to-make recipe.

Black Bean and Corn Quesadillas

Absolutely delicious!! Easy to throw together, but a bit difficult to flip in the pan. If you have a quesadilla maker, definitely use it with this recipe. But it's just as tasty with the topping spilling over. :)

I'd say three and a half. I made two large chicken breasts but halved the toppings listed here. I think I might have used a bit less sherry (wound up a bit tangier than anticipated). Definitely a filling dish. Thanks!

Curried Couscous with Spinach and Chickpeas

Amazing! I didn't know what to expect at it was one of the most scrumptious, filling, and "light" meals on this site. The sun dried tomatoes really are a must. Didn't have the cayenne pepper and didn't add salt, and I used fresh spinach instead of frozen, but otherwise followed the recipe. Made plenty...probably slightly more than 4 servings.

Chewy Chocolate Chip Oatmeal Cookies

Absolutely phenomenal. The best cookie I've ever made. I added and extra half cup of flour as many suggested. I opted for larger cookies and thus needed to do them for about 13-14 minutes in the oven, but the advice to leave on the cookie sheet for five minutes before moving to the cooling rack is paramount. I refrigerated the dough while I was waiting for the first half of the batch to bake, but did not refrigerate for a separate half hour. I took them to a group picnic and they FLEW. My partner was mad when I came home without leftovers.

Baked Teriyaki Chicken

Very tasty! I had one large chicken breast to use up so I made a small portion of the sauce (approx. 1/4 of what is listed here) and cooked the chicken for about 35 minutes, turning it every ten. There wasn't a whole lot of sauce leftover for the accompanying brown rice, but it worked. I accidentally forgot the ground ginger, but it was still scrumptious.

Baked Honey Mustard Chicken

Overall, pretty good. It wasn't the same honey mustard flavor I was anticipating, but that may have been due to the specific types of honey and mustard that I had on hand. Made for great leftovers as well.

This was amazing. I followed the recipe to a tee (with the exception of using one chicken bouillon cube instead of two) and it was absolutely delicious. I served it over brown rice.

Chicken in Sweet Pepper Sauce

Absolutely phenomenal. I used Moscato wine and canned (fired roasted) diced tomatoes. The chicken was just about the juiciest I'd ever had. Preparation was simple and straight forward. I served with rice, but there wasn't much juice left in the pan to pour over it. Perhaps I'll add a bit more broth and wine next time.

I was expecting this recipe to be spicier. I think I'll add some red pepper flakes if I make it again, but I made the recipe for friends who do no prefer spicy food, and they said it was a hit!
