Authentic Enchiladas Verdes

Less salt, but otherwise brilliant. I didn't find it necessary to double the sauce. We had just what we needed for 16 enchiladas. Also, I went ahead and used two halved chicken breasts (4 halves total) and only had a bit extra meat. It really just depends on the size of the breasts, so eye it up before you cook. This was my first time making enchiladas this way, and there is no going back. Who wants a soupy mess from the oven when you can have wonderful, fresh ingredients prepared from scratch exactly to your liking? One question: how to keep the early batches warm while you're making the rest? By the time we sat down to eat, they were already pretty cool.

Shredded Beef Chimichangas

I'd recommend covering with cheese during the last few minutes of baking so that the cheese melts, but otherwise, great!

Curry Stand Chicken Tikka Masala Sauce

Definitely lives up to the rave reviews and is worth the extra effort of standing at the stove. I used almost two full teaspoons of cayenne and WOW was that hotter than anticipated. Will probably use just one or one and a quarter next time. I also used a bit less cumin because it's not my favorite seasoning. I don't think I technically had enough chicken, but the sauce is yummy over rice just by itself. Thanks so much!

Quick Bean and Turkey Italian Meatballs

These were ok. I made half a recipe and may have accidentally put in a few too many beans, but the meatballs seemed a bit dry and starchy from the beans. I baked them in the oven as opposed to using the stove top, as another reviewer suggested. I served them with red sauce over linguine. It was okay, but the flavors didn't entirely gel.

Roasted New Red Potatoes

Awesome! Can't get more taste for less effort. I added dried thyme and garlic powder in with the salt and pepper, as other reviewers suggested. I did throw in some onion during the last 10 minutes of cooking, though my onions probably could have afforded to go a bit longer. I will definitely make this again--one of the easiest, fool proof side dishes around.

Whit's Chicken Enchiladas

This was a great recipe--packed with taste if not entirely authentic. I made it exactly as written with the exception of adding some green onion to the top while they cooked. We had red salsa and guac on the side, but personally, I liked them plain. Each enchilada is extremely hearty, so these 8 will last our family of two through the week. My only complaint is that it takes WAY longer than an hour from start to finish (try closer to two) if you're going to boil and pick the chicken, which I do think is worth it. I would recommend prepping the chicken at some other time before cooking.

Okonomiyaki

I was looking for a way to use up random vegetables, namely nappa cabbage, and stumbled upon this recipe. It served my purposes greatly, though I have no idea how authentic the end result was. I just used regular flour. They turned out pretty good, but in the end, I think I'm just no much of a nappa cabbage fan! If I make it again, I'll leave that ingredient out.

This was really yummy! I echo the review of another view who would have like to have more sauce, but I also served it over sticky rice and it was delectable! Love, love, love all the basil. I didn't have enough spinach on hand as the recipe called for, but it was fine the way it was.

Tony's Summer Pasta

This was the perfect summer dish. I only made half the recipe and substituted halved grape tomatoes for the plum tomatoes. I also had some extra chicken from the "Easy Chicken Gyro" recipe on this site that I shredded and tossed in. I only added two cloves of minced garlic (for the half recipe) because of the power of raw garlic and because the chicken I tossed in was already heavily seasoned. On the side I made some yummy pita toast: --Slice desired number of pitas in half (yielding one layer of pita). --Spread pitas on a foil covered baking sheet. --Brush pitas with olive oil. --Sprinkle pitas with ground black pepper, ground dried parsley, and parmesan cheese. --Bake in the oven at 350 for 10 minutes or until crispy. Easy Chicken Gyro

This was absolutely excellent. I was craving a refreshing, yet hearty summer dish and this was perfect. The tzatziki sauce was wonderful and very garlic-y, which might not be for everyone. I did the chicken in a fry pan after marinating. I could see where broiler or grill would add to the flavor and texture, but stove top was easier for me. I served it with curried couscous (which could also be added to the pita) and fresh fruit on the side. Thanks!

Chicken Fajita Melts

Turned out pretty well, though I had to cook them for a lot less time as my broiler was quite compact and piping hot. Just watch what you're doing--otherwise you might burn the sandwiches to a crisp!

This turned out okay. I used slightly less chili sauce because of some reviews, but felt like it could have stood a little more heat. I forgot to thicken with the corn starch, which I think would have helped with the overall feel of the dish.
