Pan Fried Daikon Cake

Very good recipe. I had told my husband that I was going to try a new vegetable and I chose a daikon radish!! This recipe was a great introduction to a new veggie and we both enjoyed it and I would make it again. I mixed some sarachi and mayo for some dipping sauce along with teriyaki pork loin. It made for a great dinner.

Chef John's Shaved Asparagus Salad

Got a thumbs up to do again!! I did have to substitute apple cider vinegar for the rice vinegar and left off the pastrami because we were having BBQ ribs, but it was still awesome.

Asian Lettuce Wraps

This was pretty good. I thought it was a little salty, but the hubs thought it was just fine. I tweaked the recipe this way- I had left over roasted chicken, so I used my food grinder to grind up the chicken, then I did double the hoisan sauce and soy sauce. That is where my saltiness could of come from, so next time I would use lower sodium soy sauce. I also added brown rice instead of white and put it in with garlic, ginger and onions, with the chicken. Added fresh bean sprouts, which gave us the crunch, that it really needed and then I used butter lettuce in place of the ice berg,which I think makes for a much nicer leaf and very sturdy for rolling, and nice flavor. It does resemble PF Changs lettuce rolls, and definitely will do it again!

Juicy Roasted Chicken

Super easy roasted chicken. One change that I did, was to add a lemon to the cavity along with the celery and used Smart Balance light instead of butter. Rave reviews and will definitely make again.

Hawaiian Coleslaw

Very nice and refreshing. I left out the nutmeg and added a dash of cinnamon in it's place and used fat free mayo. I also added some shredded carrots and some purple cabbage. It was a very colorful salad and would absolutely make again.

Sixteen Bean Sour Cream Soup

loved the addition of the cream corn and sour cream from other recipes I have tried. The Hubs gave it rave reviews. Make sure you soak the beans for an hour before you make the soup though. I used a smoked ham hock while the beans were cooking then took it out and chopped it up when I added the sour cream and corn. Perfect dinner on a cold winter night.

Leftover Meatloaf Tater Tot Casserole

A good stick to your ribs meal and a great way to use up those bits of bags of hash browns, tator tots and frozen veggies. I did make a couple of changes just to lighten it up. I used used 98% fat free soup, a splash of milk and topped it with fat free cheddar cheese when it came out of oven. No difference in taste or texture. I did cover it with foil to cook, just to keep it from drying out.

Tuscan Soup

Very good. Basic recipe is good enough, but I didn't have the Italian sausage, so just used a different type. Added some hot chili peppers, Italian seasoning,ground black pepper. 1 1/2 cartons of Chicken stock and kale in place of the spinach. I also added dehydrated hash browns in place of the chunky potatoes. I added fat free evaporated milk and could not tell any noticeable difference, just less fat. It is a definitely do over for any night.

Skillet Zucchini Cornbread

Very good. Excellant way to use up those big zucchini that get away from you!! Tasty and moist. Will be doing this again. I didn't have the self rising corn meal or flour so added some baking powder and a little extra salt. I used 2 eggs from my chickens but had a two yolk egg so it added a little more to richness of the corn bread. This is not your usual corn bread. Mine was very dense but flavorful. Not dry at all.

Gazpacho II

Very refreshing soup. Using fresh vegetables and the spicy V8 gives it that pop of flavor that makes it good. I also upped the hot sauce (we like spicy in our house) lessened the oil (2 T max) and also added diced radishes for garnish for a crunchy texture. Very yummy soup and very good for your waistline also!

Italian Chicken Sausage Stuffed Portabellas

Way Good!! Hubs says do it again!! Added a few red pepper flakes and used low fat cream cheese to lessen the calories. Will definitely add this to a regular meal rotation. So super easy and a light dinner for summer.

Christine's Meat Loaf

it had good flavor, but didn't hold together like "normal" meat loaf. it could be though because i didn't make it exactly like the recipe called for. I was out of turkey burger so used chorizo, but other then that it was pretty much the same. Oh and I baked mine in a cast iron skillet/dutch oven. It made for a great salad or sloppy joe topping though and would probably make it again just because it does have great taste!!

Quick Hoppin' John Soup

quick soaked dry black eyed peas. Then saute' onions, garlic and green pepper, with small tube of Jimmy Deans sausage. Add beans, large can crushed tomatoes & 1 carton organic chicken broth, you can add water also if needed to cover beans. 2 Tablespoons smoked paprika, 2 Tablespoons Old Bay seasoning, 1 Tablespoon creole seasoning,1 teaspoon dried sage, some pepper. Put on stove in dutch oven and cook the afternoon away, till soup is the consistency that you like. Used uncle bens boil in bag natural whole grain brown rice to put the Hoppin John on. Very yummy!!
