For the first cheesecake I ever made it ended up awesome! I made it mango flavor, with real mangoes, on my dad's birthday. A bit of a mistake. It cooked well in the water bath and really was all cooked after a little more than an hour, but because of the rush I left it in the oven for only three hours afterwards and in the fridge for thirty minutes. We just wanted to eat it on his birthday. Putting it in the fridge that quickly didn't cause it to crack or anything, but the middle was soft and my mom thought it was undercooked. It was fine, but for it to get that cheesecake consistency we put the leftovers in the fridge and overnight it became perfect. Great recipe, you don't need to follow the ingredients to a T, but the water bath and the time is important to get right.
