Low-Fat Banana Bread

This is surprisingly good! I do not know why the traditional recipe needs so much butter, but I like the taste and aroma. One change I made was the addition of 1/2 chopped walnuts.

Apricot Almond Scones

I modified the original recipe so it's not a 5-star but I loved the final product. After reviewing other comments, I added 2 things - double (triple) the almond extract and 3-4 oz of almond paste. My almond paste was frozen, so I shaved them and mixed them into the flour/butter/sugar mix. Please note that almond paste has sugar so you may want to reduce the amount of sugar. The scones were pretty and yummy; apricot and almond are good comb together.

Chunky Corn Chowder (Vegan)

This is a good recipe - healthy, tasty and easy to make. I added potato/carrots into half cooked onion/garlic to keep the flavor and reduce one less bowl. The soup is a bit light so next time I will add more garlic and perhaps thyme.

Oven-Roasted Root Vegetables

I tried this recipe a couple times and they turned out great both times. Any root vegetables are good, I particularly like sunchoke, celery, carrots, red onion and butternut squash. There is no reason to put additional vegetable broth (but I also reduced the oven time). I crushed the garlic and mixed it with the root vegetables. The veggies are sweet and tangy, Yum!

Excellent Broccoli Cheese Soup

I tried this recipe using 3 servings which called for 2 cups of milk and 2 cups of broth. Skipped the 2 cup of broth and the processed cheese, only used milk and cheddar. It made a creamy and yummy soup that everyone loved; very easy to make.

Becel® Browned Buttery Brussels Sprouts

This is an easy and tasty receipt. I made a couple minor adjustments. My family like the Brussels Sprouts to have kind of a bit, so I cooked in salty water for 3 minutes (after halved) then put them in cold water. I used a couple cloves of minced garlics instead of shallots/onions. I also toasted 1/4 cups of almonds and mixed them with the sprouts just before serving. Every one loves the veggies!

Herbed Rice and Spicy Black Bean Salad

easy to make and pretty tasty. Next time, I will use 1/2 of the vinegar instead and twice more celery and seasoning. I used the left over sushi rice which was sticky and took me a while to separate the rice. I think the standard rice will not have this problem.
