Pesto Chicken Penne Casserole

I made this as written except I changed to recipe to feed 48 (rather than 12). It actually made five 9 X 13 pans. Very yummy. Easy to make. Lots of people asked for the recipe. I will definitely make this again.

Zucchini Ranch Meatloaf

Made this when having friends over for dinner. Several asked for the recipe and everyone raved about it. A great recipe. I'm making it tonight for a family dinner. My son really likes it, even though he is not a vegetable fan.

Kickin' Collard Greens

This was my first time making greens. I adjusted the recipe for 40 people for a pot luck. I followed the recipe exactly except I mixed mustard, collard and turnip greens and substituted onion powder for the fresh onions. I also added just a bit of old bay seasoning. These were fantastic. There were no leftovers. I'm looking forward to making these again. YUM!

Apple Hermits

Excellent recipe. I was concerned that the batter looked dry, but after reading some other comments, I left it as is. The cookies turned out moist after baking. I did add a teaspoon or so of vanilla, because I love it. Like others suggested, I substituted pecans and dried cranberries, because that is what I had on hand. I used about 1 1/2 c of apple. I omitted the icing, because they are already delicious without it. Yum!

Kansas City Style Pork Back Ribs

Awesome! This was my first time making ribs. I followed the rub recipe exactly, except that I didn't have any sage. As some others suggested, I baked them in the oven at 300, covered with tin foil for 2 hours, then uncovered for 1 hour. Then I brushed them with the barbeque, honey combination, cooked them 15 minutes, turned and brushed again and cooked them for 15 minutes more. (A total of 3 1/2 hours at 300.) I did 3 full racks of baby back ribs. They were restaurant quality. Yum. I will be making these again.

Garlic Parmesan Orange Roughy

Very tasty. The recipe made way more topping than was probably necessary. Next time I will cut way down on the butter or eliminate it all together. Very good and easy.
