Zucchini Bites

These are very tasty and were very easy to make. I doubled the recipe (everything except the onion because my kids don't love onion) and it made about 42 mini muffins. I substituted 2% evaporated milk for the heavy cream and I used a mix of cheddar and parmesan for the cheese. I also sauteed some minced garlic with the veggies and added some dried Italian seasoning. Very tasty!

Easy Banana Brownies

Fantastic and easy. I doubled these and made them in a 9x13 pan. I also added some extra chocolate chips to the batter right before baking. They took about 35 minutes in my oven and were chewy and delicious. They don't need frosting, but I was taking them to an event and dressed them up with the banana buttercream icing from this site. They disappeared very quickly!

Roasted Beets 'n' Sweets

I just made this for Thanksgiving dinner and it turned out great! I actually boiled the beets for about 10 minutes before peeling and chopping them and still cooked them for the full hour in the oven. They were nice and tender. I also followed another reviewers suggestion and used a tbsp of brown sugar instead of the white sugar. Otherwise, I didn't stray from the recipe at all. Everyone loved it!

Red Skinned Potato Salad

I'm usually not a potato salad fan, but I do enjoy this recipe and my husband LOVES it. The only change that I make is to add some dijon mustard to the mayo. Great recipe - thanks!

Home Style Macaroni and Cheese

I've made this macaroni several times and my family loves it! I saute some onion and garlic in the butter before adding the flour, but otherwise keep everything else the same. I don't put much topping on, because my kids prefer it without, but that's just a personal preference thing. Thanks for a great recipe!

Spinach Brownies

Fantastic! I've served these several times at parties to rave reviews. It's also a way to get my kids to eat spinach. I saute the spinach and onion together, but otherwise follow the recipe as written.

Cheese Garlic Biscuits II

Loved these! I followed suggestions from some other reviewers and made these changes: I doubled the baking powder, I used extra cheese (by about 1/2 cup), I added 1/2 tsp of garlic powder to the batter, and I put the butter in the freezer for 15 minutes before making the biscuits and grated it into the flour mixture. Turned out great! I may have to play with the temperature on my oven because they were very brown on the bottom after only 12 minutes, but that should be an easy fix.

Banana Sour Cream Bread

Fantastic bread! I halved the recipe (using 2 eggs and 4 bananas) and got two 9x5 loaves out of it (baked for just over an hour at 325 degrees) One of the best banana breads I've ever had!

Home-Style Scalloped Potatoes

My husband loves scalloped potatoes, and I hate preparing them. I have made these several times now and even I enjoy them and don't find them too much of a hassle to make. I use a whole onion (personal preference) and some minced garlic and cook them for 90 minutes. Delicious!

Mushroom Pork Tenderloin

Curried Cauliflower

This is very similar to a dish that a friend of mine makes. I used cream of mushroom instead of cream of chicken (because it's what I had on hand) and I added about a 1/2 cup of mozzarella (I think cheddar would be good too). I used one package of frozen cauliflower and just doubled the cooking time (because I didn't bother to thaw it first). My husband is addicted!

Garam Masala Seared Salmon with Coconut-Curry Butter

Really enjoyed this. I made it just as written, except that I doubled the coconut milk (as recommended by other reviewers) The only thing I might do differently next time is to quick sear the salmon on the stove top and then finish it off in the oven (just my preference)

Excellent! Every time I serve these, I have someone ask me for the recipe. I've made them with buttermilk and with a milk/vinegar combo when I don't have buttermilk on hand, and they always turn out great.

Little Meat Loaves
