Absolute Best Potato Casserole

This recipe was delicious and reminiscent of a casserole my Grandma used to make. Big hit w/ the guys, but with the girls it was pretty rich. It keeps well, and I've had it for lunch for a week in small amounts. Don't even try it w/out ham! It loses all the flavor. Also, needed extra salt and some oregano to lift the swiss flavor. Will make this again!

Last Minute Chicken Dinner

This was sooo good! My husband and I loved it! I made some changes that I can recommend: I omitted carrots (personal taste), omitted potatoes and went straight to cooking chicken, using only 1Tblsp. oil., added another 1/2C onion (looks like a lot, but trust me!), and used one full cup of skim milk with healthy request campbells cr. of chicken soup. It came out low fat and so delicious. We put it over wide egg noodles and viola. Thank you for a great, quick idea!

Stuffed Green Peppers I

YUMMMMMM!!! I made this for picky Korean in-laws, and it was a huge hit; even though they aren't big on cheese, they loved it! Only recommendation is to add more than 1/2C water; I found it took a while for the rice to become tender, it soaks up the water fast and everything tends to scorch. This is truly delicious! Definitely worth trying, and will make it again!

Blueberry Buttermilk Coffeecake

This is DELICIOUS!!!! I used half brown sugar, half white sugar, and about 3TBLSP cinnamon for the topping and doubled the amount in the recipe, as the topping absolutely made this cake. Also took advice of coating the blueberries so they wouldn't sink. One hint; don't overcook- it will get rubbery really quick. It was great!

Spanakopita (Greek Spinach Pie)

Oh WOW!!! Talk about melt in your mouth! This was awesome. My husband is a VERY picky eater, and he gobbled up three helpings. I strayed from the recipe only to add a full cup of feta instead of a half. YUMMY!

Awesome Korean Steak

A five star all the way. I marinated the steak for 48 hours, and simmered it in the juices in the frying pan. When I served it, I used white rice to sop up the juice. My husband is Korean and says this is the best thing that's come off this website! Thanks!

Kung Pao Chicken

Four stars simply because of all the mods it needs, but end result was delicious, once tampered with. I multiplied the marinade and sauce ingredients by 5, which was enough for 3 large chicken breasts and 4 big servings. Cornstarch was 10tsp to 10T. Added 1 red bell pepper, one coarsely chopped onion, and 3tsp. red pepper flakes. Used Siracha hot chili sauce in place of paste. Was SO GOOD! Great and worth the time!

Beef Egg Rolls

EXCELLENT!!!!! Definitely cool filling completely and drain all liquid before wrapping! Also, drop in peanut oil immediately after wrapping each roll. I found out the hard way that resting them on a plate destroys the wrapper! Don't skimp on the salt or soy sauce, and the carrot I added made a huge difference in taste and texture! AWESOME recipe! Thank you for sharing!

Beef Enchiladas II

AWESOME! I also added a packet of taco seasoning and a green bell pepper to the beef/onion mixture, as well as a can of enchilada sauce. I poured 3 cans of enchilada sauce (2 hot, 1 mild) over the enchiladas once in the baking dish, and MMMMMMM, MM!!! They were amazing! Not dry in the least.

Slow Cooker Mashed Potatoes

SO YUMMY! I WOULDN'T USE RESERVED BROTH TO THIN OUT POTATOES UNTIL THEY HAVE HAD A CHANCE TO SIMMER IN THE SLOW COOKER A WHILE. THEY TEND TO REALLY LIQUIFY ON THEIR OWN WITH COOKING. I USED REDUCED FAT SOUR AND CREAM CHEESE, AND IT WAS AMAZING!!!!

Tuna-Stuffed Avocados

So much creamy stuff, you couldn't taste the tuna. If there is a next time, I will halve the amount of cream cheese/mayo. The combined textures of avocado, mayo, and cream cheese was like eating slices of butter.
