Classic Chicken Noodle Soup

The BEST. Won't ever look for another chicken soup recipe. The flavor of the soup will change depending on the type of chicken you buy.

Microwave Oven Peanut Brittle

Very easy and quick. I would stay by the microwave and watch it so it doesn't burn. Also, someone else mentioned that a good way to get the brittle to spread is to heat the oven to 250 and heat the pan first. Or the brittle doesn't spread well and turns out thicker.

Sopapilla Cheesecake

So yummy. Since I was lazy I didn't want to do any rolling out, I altered that part of the recipe. I opened the rolls and separated the dough into four large rectangles (four triangles connected.) Just filled the center, folded them over, and pinched the sides. I think my cook time was about 18 min. The rest of the recipe is the same. They puffed up nicely. Don't worry about overfilling because they do puff up. Oh, I did use low fat cream cheese and low fat crescents, no sacrifice in flavor at all.

Easy Bake Brisket

Love it. I only used a 2 lb brisket so had to take about 1 hour 15 min. off the cooking time. And I only used the onion soup mix with a 14 oz can of tomatoes with onion and green pepper. Will definitely make it again.

Amazing Sun-Dried Tomato Cream Sauce

I sauted chicken, then added the other ingredients per the recipe. I think it needs some umph somewhere. But the kids loved it because it didn't have anything fancy about it. I will try it again.

BBQ Pork for Sandwiches

Very tasty. The changes I made: added a dash of onion powder to the shredded pork, and I did NOT use a whole bottle of bbq sauce. I suggest adding and tasting.

Alternative Baked Salmon

We enjoyed this recipe. The only thing I did differently is that I had to cook it about 15 minutes longer (I might have had a bigger cut.) And our 6 year old ate it, too.

Stir Fried Sesame Vegetables with Rice

My kids even liked it. I like to use short cuts during the week so I bought pre packaged stir fry vegetables in the veggie section. I also use a rice cooker. You can use chicken broth in it instead of water and it's easy without having to watch over it. You can use just about any veg combo and it will be great. Good recipe.

Spicy Grilled Shrimp

Very good. I prepared the recipe as directed. I made these shrimp for a southwestern salad- lettuce, grilled corn, black beans, tomatoes, tortilla chips, cilantro lime dressing. Wonderful.

Orzo and Rice

This is very much like my Armenian mother-in-law's pilaf except she uses vermicelli instead of orzo. I liked it. It is a simple dish great with chicken or fish. I also used canned stock instead of the boull. and water. I have also sauted onion and mushrooms in with the butter.

Pistachio Fluff Fruit Salad

Yummy! I cut the canned fruit amounts in half and added lots of fresh grapes, apples, blueberries, bananas. The canned fruit is essential for the flavor but I love fresh fruit for crispness. I also thought that there was a bit much of the pistachio whipped topping. Next time I will add some, mix, add some more and probably won't use it all. The pistachio mixed in was ingenious.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

One of my favorite quick lunches with friends. I use canned Italian tomatoes with basil and four cheese ravioli. And the oil at the end is essential for keeping the pasta from sticking together. I also saute the garlic in the oil for about a minute before I add the other ingredients. I don't add the marinade from the artichokes.

Chicken and Dumplings III

Very easy and yummy. I also added a can of mixed peas and carrots and added a few slices of onion to the chicken boil. Also, if you cut the dough too big they do tend to taste a little doughy. Cut them smallish.

Breaded Center Cut Pork Chops

Favorite pork chop recipe. Even my 4 yr old loves it. I also use less of everything (less than a cup of flour, 2 eggs, etc.) and instead of all of the seasonings I just use Italian style bread crumbs. And adding the water doesn't make mine soggy. I think it helps keep the chops moist.
