About this Cook
I'm Italian. I love to cook and bake; and the tweaking or remaking a classic recipe and in creating recipes. I use to teach nutrition, cooking, and baking with an emphasis on vegetarian. I still partake in eating meats, occasionally. I especially like to make things from scratch: breads, pasta, tofu, cheese (& vegan, as well), yogurt, seitan, nut-meats, meatless patties/loaves, utilizing grains, legumes, & veggies. I like to challenge myself! I also like to use different cooking methods which also keeps me challenged. I enjoy learning from other chefs/bakers.

Anything/Everything from America or ethnic based.
My favorite family cooking traditions
Are the holidays. My children and grandchildren are together, we gather to bake and cook. We decorate each room. Play. With aromas from the kitchen, we fondly reminisce past holidays and events as a family.
My cooking triumphs
All! My mama, my grandmother (nonna), my aunts (zie) were all instrumental in giving me instruction and inspiration in cooking and baking.

I really can't recall one. I'll have to think about this one.

Chef John's Lamb Moussaka Burger
This is a delicious burger! I have made it several times. It is delicious using beef, too. I have not changed any of the meat seasonings. I like it just the way it is. Sometimes I will substitute Goat or Feta or Kefalotyri cheese for the Parmesan cheese in the Bechamel Sauce. I like to serve it in homemade Pita Bread. Thank you Chef John.

The Ultimate Pasta Salad
There are many cured Italian meats, pastas, cheeses, vegetables, and olives that can be used in a pasta salad. Seasonings: herbs, spices, aromatics, and vinegars can vary as well. Combine lettuce, Italian meats: pepperoni, salami, etc; chopped hot pickled vegetables (Giardiniera), Kalamata olives, roasted sweet red peppers, marinated mushrooms, and artichoke hearts. Imagine. Create. Experiment. “A recipe has no soul. You, as the cook, must bring soul to the recipe.” ~Thomas Keller Vivere, Amare, Ridere e Mangiare Bene! Translates to: To Live, To Love, To Laugh and To Eat Well! Buon Appetito! Translates to: Good appetite!

Spaghetti Aglio e Olio
Spaghetti Aglio e Olio is one of the most classic Roman side dishes and at one time considered a "peasant's or poor man's" dish. This recipe brings so many wonderful & vivid memories with my Italian family - after dancing, visiting with friends, watching/playing soccer, or after a movie, it was our favorite late night snack. It is especially wonderful & delicious served over homemade pasta.
