Baked Garlic Parmesan Chicken

I thought this was fantastic and so did my very, very picky kids! I didn't change a thing about the recipe except I had to bake it an additional 10 min(I think my oven runs cooler). The chicken was tasty and very moist. Perfect and all my guests complimented me on it! It was super easy to make as well.

I thought this was pretty good! It was a little watery so I would cut down on the tomato juice next time. I used 2 cans black beans, 1 can pinto beans and 1 can red beans. I will make again!

Pico de Gallo Chicken Quesadillas

I made these for the first time tonight, not only were they easy...they were AWESOME! The Pico was SO yummy and fresh. I used extra cilantro becasue I LOVE it. Next time I think I will add a little more lime juice as well. I also had leftover chicken breast from last night's dinner so that made this much quicker and easier to put together. I am glad my husband was here to do the flipping duty because I probably would not have been able to myself. I think using half the tortilla and folding it over may be the better option. Definetly make extra pico for dipping chips in! YUMMY :)

Mulligatawny Soup I

Really Yummy! I doubled the recipe and used 3 large chicken breasts. I also doubled the amount of rice but used instant brown rice. REALLY good the next day.

Braised Balsamic Chicken

This was good but not wow! I cut chicken into bite size pieces before cooking. I served over brown rice. I think next time I will add some garlic to this and more salt and pepper and top with some parmeseam cheese. Definetly an easy and quick dish to make and a nice change of pace. Will make again!

Best Brownies

I wanted to make these for a party and since they got such great reviews I thought these would be really good. I was dissapointed. They were not soft and chewy at all and not choclatey tasting at all. You know they aren't good when an 8 year old tells her mommy she doesn't like the brownies! The plate was still full at the end of the party. I won't make these again.

I was happy to find these brownies that required oil and not butter since I was out of butter. I thought they were super easy to make and very tasty. Didn't change a thing! YUM!

Stuffed Cabbage Rolls

This turned out pretty good. I did change a few things though. Instead of the tomato soup I used 1 can diced tomatoes, 2 cans tomato sauce, worchester sauce, brown sugar and lemon juice. I also baked at 350 for 1.5hrs. Still needed some more seasoning though, will season better next time but I really like it!

I really recipe! To make it healtier I substitute the butter with Grey Poupon and it woorks wonderfully and is so yummy. Very easy to make!

Nice & Moist! I cut down on the butter and used Splenda instead of sugar to make it 'healthier'. I also added a cup of raisins. Very moist, light & fluffy!
