White Bean Fennel Soup

i had been wanting to try fennel and thought this soup would be a good place to start. unfortunately i didnt like the fennel and the flavors didnt seem to go together very well. if you really like fennel then you would probably like this soup.

Curried Carrot Soup

I thought this soup was great! I did make some changes though. I used onion, cauliflower, baby carrots and suggested spices. I boiled them in just enough vegetable broth to cover until veggies were tender then blended till smooth. Very easy, tasty, and spicy. Great for warming up on a cold winter day!

Pineapple, Lime, and Ginger Soup

I have made this soup about three times and loved it, even though I did it a little different each time. Ive substituted salsa for the tomato, also used tomato soup concentrate, and subbed lemon for lime. I really like this soup, but it does have a lot of really strong flavors. Probably not for unadventurous eaters.

Blue Cranberry Sauce

I made this for Thanksgiving 2006. Im personally not a cranberry sauce fan but I really enjoyed this. I added a little more suger and took it light on the spices (omitted the allspice cuz i didnt have any) as some reviewers suggested. I served some as is, and also as an appetizer over a block of cream cheese with ritz crackers for dipping as one recipe on all recipes suggested. One family member said it was the best cranberry sauce she'd ever had!

Bleu Cheese Macaroni

This is a great variation on the traditional mac and cheese. I personalized it a little by using rainbow shells instead of macaroni. I also added fresh garlic and a jalapeno pepper. I didnt have any heavy cream on hand so i substituted neufchatel (low fat cream cheese) cheese and milk. It was very flavorful and also good with hot sauce. I will definitely make this recipe again, probably for a family gathering or special occasion.
